Feta Pine Nut Dip

Ingredients

  1. 1/2 cup pine nuts
  2. 1/2 cup finely chopped red bell pepper
  3. 1/4 cup finely chopped fresh parsley
  4. 2 tablespoons Spice Islands Sweet Basil
  5. 1/4 teaspoon Spice Islands Mint
  6. 6 ounces feta cheese
  7. 1/4 teaspoon Spice Islands Garlic Powder
  8. 1/4 teaspoon salt
  9. 1/8 teaspoon Spice Islands Medium Grind Black Pepper
  10. 1 cup plain yogurt

Instructions

  1. Preheat oven to 350 degrees F.
  2. Toast pine nuts in a shallow baking pan, stirring occasionally until golden brown, about 7 minutes. Cool and chop finely.
  3. Combine nuts, red pepper, parsley, basil and mint in a medium bowl. Crumble feta in small pieces, add to nuts.
  4. Whisk garlic, salt, pepper, and yogurt in a small bowl until well blended. Stir into the nut and feta mixture. Chill for one hour.
  5. Serve with crackers.
