Instructions
- With a mixer, blend 16 ounces room-temperature cream cheese with 1 1/2 cups shredded cheddar, 3 tablespoons minced onion, 2 tablespoons salsa, 2 teaspoons ground cumin and 1 teaspoon minced jalapeno. Scoop onto plastic wrap and use the wrap to form the mixture into a 5-inch pumpkin-shaped ball; chill at least 2 hours. To serve, unwrap, roll in crushed nacho-flavored tortilla chips and press a bell pepper stem into the top.

Made this for an office potluck, it was a hit! The only thing I did differently was after I wrapped the ball, I put some rubber bands around it so it would set with indentations like a pumpkin. It turned out really well. You could also use a butter knife after you roll it in Doritos to make the “lines” more pronounced.
We’ve been making this every Halloween for years, and my family and friends would kill me if we didn’t – ’nuff said.

This was super easy to make and it is delicious! We did add the jalapeño as my daughter does not like spicy food, but otherwise followed the recipe. I will definitely make this again.
I was skeptical but I was happy to be proven wrong. My picky guests loved it and couldn’t believe that I made it. I’ve wrapped it in the cheddar cheese for healthier alternative and added some sunflower seeds.
This was a hit for our family. Next time I will either use a whole jalapeño or pickled ones as that kick of heat was not there with what is listed in the recipe.
