Ingredients
- 2 oranges
- 1 lime
- 1 cup sugar
- One 12-ounce bag frozen raspberries
- 1/4 to 1/2 cup Italian bitter liqueur, such as Aperol
- One 750-milliliter bottle prosecco, chilled
Instructions
- Make the simple syrup: Use a vegetable peeler to remove the peels from the oranges and lime. (Be careful not to remove the bitter white pith from the fruit). Combine the citrus peels, sugar and 1 cup water in a medium saucepan. Bring to a boil and cook until the sugar dissolves, about 2 minutes. Cover and let cool completely, about 30 minutes, then strain out the citrus peels.
- For the spritz: Place the raspberries in a blender. Add 1/2 cup to 1 cup water and process until smooth. Strain the liquid through a fine-mesh strainer to remove the seeds.
- Stir together the simple syrup, raspberry purée and Italian liqueur. Pour into glasses filled with crushed ice and top off with the prosecco.
