Spicy Chocolate Pork and Beans

Ingredients

  1. 4 pounds pork shoulder, diced
  2. 3 tablespoons olive oil
  3. 4 red onions, finely chopped
  4. 6 cloves garlic, crushed
  5. 1/4 cup plus 1 teaspoon smoked paprika
  6. Six 14-ounce cans chopped tomatoes
  7. Four 14-ounce cans black-eyed peas, drained and rinsed
  8. 2 cups coconut water
  9. 6 ounces dark chocolate
  10. 1/2 pound basmati rice, cooked
  11. 4 small avocados, sliced
  12. 1 bunch fresh cilantro, chopped

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Preheat an ovenproof saute pan with a lid over high heat.
  3. Working in batches, brown the pork on all sides in 2 tablespoons oil, then transfer to a bowl.
  4. Heat the remaining tablespoon oil in the pan, then cook the onions, about 5 minutes. Add the garlic and smoked paprika and cook for an additional 30 seconds.
  5. Add the chopped tomatoes, black-eyed peas, coconut water and the pork and bring to a simmer, stirring well. Cover and transfer to the oven. Bake, stirring occasionally, until pork is tender, about 1 1/2 hours.
  6. Stir in the chocolate until it has melted. Serve with the basmati rice, avocado slices and cilantro.

On the show he added sweet paprika, smoked paprika and chili powder to the sauté of red onions with garlic sauted in butter in center of onions. Got the spices to bloom as stirring with onions/garlic. Added balsamic vinegar and some Tennessee whiskey that he found–sounded as thoug this was not normally added. Added all to Dutch oven with pork before adding black eyed Peas and tomatoes. He also said he added chicken stock…maybe instead of the coconut water mentioned in recipe? I guess it would be your preference or what you have on hand. The dark chocolate he said he used was 70%. It looked really good on the show and got lots of compliments.

Great looking recipe but you haven’t included any spices other than paprika.

Did you not use any salt, pepper, cumin, cinnamon. chilies, adobo, chipotle or any other basic flavour ingredients?
