Mixed Masala Nuts with Raisins

Almonds, pistachios, cashews and raisins get baked with a curry and masala spice blend for a flavorful snack reminiscent of masala kaju.

Ingredients

  1. 1/4 cup unsweetened flaked coconut
  2. 3 tablespoons sugar
  3. 2 teaspoons garam masala
  4. 1 teaspoon curry powder
  5. 1/2 teaspoon ground turmeric, optional
  6. Kosher salt
  7. Vegetable or canola oil, for the baking sheet
  8. 1 large egg white
  9. 1 cup unsalted raw almonds
  10. 1 cup unsalted raw cashews
  11. 1 cup unsalted raw pistachios
  12. 1 cup unsalted raw walnuts
  13. 1 cup golden raisins

Instructions

  1. Mix together the coconut, sugar, garam masala, curry powder, turmeric if using and 1 1/2 teaspoons salt in a small bowl and set aside.
  2. Preheat the oven to 350 degrees F. Lightly coat a rimmed baking sheet with oil.
  3. Put the egg white in a large bowl and whisk until frothy. Add the almonds, cashews, pistachios and walnuts and toss to coat in the egg white. Add the spice blend and toss to coat.
  4. Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, stir in the raisins and transfer to a large bowl.
