Mary’s Meatloaf

  4.6 – 458 reviews  • Beef Meatloaf Recipes

One night, I threw a few ingredients together haphazardly with some chicken, and the stuffed bell peppers ended up becoming one of my husband’s favorite dishes! I’m really happy with it!

Prep Time: 20 mins
Cook Time: 2 hrs
Total Time: 2 hrs 20 mins
Servings: 6
Yield: 6 servings

Ingredients

  1. 1 ½ pounds lean ground beef
  2. 1 large onion, chopped
  3. salt to taste
  4. ground black pepper to taste
  5. garlic powder to taste
  6. 6 slices white bread, cut into cubes
  7. ½ cup milk
  8. 1 egg
  9. 3 tablespoons yellow mustard, divided
  10. ½ cup ketchup, divided
  11. 3 tablespoons brown sugar

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, thoroughly mix ground beef, onion, salt, pepper and garlic powder. Mix in bread, milk, egg, 2 tablespoons mustard and 1/4 cup ketchup.
  3. Press the meat mixture into a 9×5-inch loaf pan. In a small bowl, stir together remaining mustard, ketchup and brown sugar; pour on top of the meat loaf.
  4. Bake in the preheated oven until an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 2 hours.

As a chef, many great meatloaf greats. Do not put in LOAF pan. It “steams” the meat. Form into a loaf, elevate on a rack and cook till internal is to your liking. It will be a lovely brown all over. I think you will love it!

The seasoning for this meatloaf is good, basic but good, similar to many others. My dislikes were only two~ The bread cubes do not break down as I hoped they would/should, (Use Bread crumbs) that made the meatloaf come apart when trying to slice, the bread chunks just caused it to break apart. My other dislike was the raw onions added, (Always) saute the onions before adding them to the meat, it makes them tender and fully cooked when finished.

Love this one too!

Best meatloaf ever! I used bread crumbs rather than bread and I put mine on the grill – cooks faster and no cleanup.

This was the best meatloaf I have ever had in my 71 years of living. It didn’t have measurements for salt pepper and garlic so are used in that same order 1 teaspoon, 1/2 teaspoon, and 1/4 teaspoon. I made it exactly as directed otherwise. My wife and I both loved it. It was great. I highly recommend it to anybody who is making a meatloaf.

Very tasty. I made it with oatmeal, and will make it again.

Deeelicious!! The entire family loved it. The majority of the family doesn’t like meatloaf, so this is amazing. It was so moist. Only changes I made were I fried the onions before adding them and substituted about 1/4 of the ketchup for our favourite BBQ sauce.

Excellent meatloaf recipe. The only change I made was to cut back on the milk by a couple Tbs. which I replaced with 2 Tbs of worstershire sauce. Also, using my LG convection microwave, the meatloaf only took 1hr and 10 minutes to reach 160 degrees. The end result was excellent. It’ll be a new “go to” easy dish in the future.

Excellent. I always make extra sauce for the top. Cooking time for me is always around a half-hour so I’m not sure why the instruction is to cook for 2 hr.

I love the simplicity of this and altered it a lil bit…no milk, no bread – I use oatmeal and Italian Breadcrumps instead of bread and use Worcestershire sauce instead of milk for a more savory taste…I cook it about an hour at 375 degrees and everyone loves this..including my husband and he’s a chef!

I have made it several times with Ritz crackers and it’s the only meatloaf I like and others are quiet at the table! Everyone is devouring it!!

I was making this for my new boyfriend who is a little picky eater. This recipe was this close to what his sister told me how their late mom made it.? She used crackers instead of bread so I did make that one substitution. This was the best leftover meatloaf for sandwiches I think I’ve had, the consistency was really good and it was a huge hit with the boyfriend!? ??

I did cubed loaf bread and soaked it in the milk before I put it in…..Had to mix it up really good. used more of the glaze on top also and it was soooooo good

Very bland. This recipe needs some spices besides garlic! Perhaps some Southwest flavors like like cumin and chili powder or Italian like some oregano and rosemary.

We really enjoyed Mary’s Meatloaf! I adjusted the recipe according to other reviews. I sautéed 1 green pepper, 3 cloves of garlic with the onion first. I used 2 lbs of beef,( I may try beef and pork next time just to shake it up a bit!) 1 teaspoon of Italian seasoning, 3/4 cup crushed Ritz crackers instead of the cubed bread and I always use Worchestershire with beef so I added heaping tablespoon! The brown sugar topping was really tasty! Only cooked it for just over hour and a half. 2 hrs for a meatloaf seems a bit much. Will definately make again!

I added 1 tsp of Worcestershire sauce and 3-4 chopped mild piquante peppadew peppers! Amazing!!

My go-to meatloaf recipe! Have made many times, excellent flavors, easy to make – the sauce for glaze & topping is the kicker.

Partially my fault, but mine ended up too wet, and I had to drain some liquid off after cooking. I bet this is because I used 1 lb instead of 1.5 lbs. I’ll need to adjust for next time! This is a very good recipe.

My family loved it! I will make it again.
