Ingredients

  1. 2 cups uncooked elbow macaroni
  2. 3 large hard-cooked eggs, chopped
  3. 1 small onion, chopped
  4. 3 stalks celery, chopped
  5. 1 small red bell pepper, seeded and chopped
  6. 2 tablespoons dill pickle relish
  7. 2 cups creamy salad dressing (e.g. Miracle Whip)
  8. ¾ cup white sugar
  9. 3 tablespoons prepared yellow mustard
  10. 2 ¼ teaspoons white vinegar
  11. ¾ teaspoon celery seed
  12. ¼ teaspoon salt

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and set aside to cool.
  2. Combine eggs, onion, celery, bell pepper, and relish in a large bowl. Stir together salad dressing, sugar, mustard, vinegar, celery seed, and salt in a small bowl. Pour over eggs and vegetables. Top with cooled macaroni; stir until well combined. Cover and chill in the refrigerator for at least 1 hour before serving.

This is a good recipe but I used a whole box of bow tie pasta otherwise it would have been too much dressing. As another reviewer mentioned they pour just enough to coat the pasta and reserve the remaining dressing in a jar. Also I cut the sugar back to 1/2 cup and that was still too much sweetness. I will use an 1/4 cup or less next time.

THE BEST Macaroni salad! I get compliments every time I make it. I do change a bit. I use Hellmans mayo, 6 eggs, 3 TBSP of the dill pickle juice no celery.

Agree w/the sugar notes..2 much) on 2nd try I added ham, black olives and banana peppers….original recipe is also good on potato salad (less the sugar). If you have been to the Amana Colonies you will see how good their food is…YUM!

Loved this salad! I did cut the sugar to 1/4 c and it was perfect. I omitted the hard boiled eggs because I’m not a fan and then added some shredded cheddar cheese and 1 cucumber, peeled and thinly sliced. I only used enough of the dressing to coat the salad well and saved the rest in case it needed more the next day, but it didn’t. Both hubby and I finished this off and thoroughly enjoyed it. Thanks for the great recipe!

I usually try to do exactly as printed – but with so many reviews saying to go easy on the sugar I ended up only putting in about 3 tablespoons and it was plenty! you can keep adding if needed. I also put in 1 1/2 cups of Miracle whip and 1/2 of mayo. It was delicious and taste even better the next day.

I have made this salad several times, it is great but when the pasta was done cooking I put it in a bowl of cold water and let it sit in there until the pasta was completely cool and then added the rest of the ingredients.

I used to think I had the best Mac salad recipe. That is until now! I would have given this 5 stars hands down except I adjusted the suger down to a quarter cup, used an entire box of elbows and used 4 eggs. I’m so glad I read the reviews before I made it. So good!!!

Awesome recipe!!! Enough said… A few tweaks that you may consider as well: Works well as Mac salad or potato salad You can use either relish depending on your taste for pickles sweet or dill Only add sugar at small intervals mixing well the recipe to my taste calls for a bit more then my taste likes. But all in all it’s awesome.
