Ingredients

  1. 2 cups all-purpose flour
  2. 1 tablespoon sugar
  3. 4 teaspoons baking powder
  4. 1/2 teaspoon salt
  5. 2 eggs
  6. 1 3/4 cups milk
  7. 1 teaspoon vanilla
  8. 2 teaspoons rum
  9. 1/2 cup vegetable oil or canola oil, plus for frying
  10. 1 cup cornmeal
  11. 3 cups all-purpose flour
  12. 1 tablespoon baking powder
  13. 1 tablespoon salt, plus for sprinkling
  14. 2 teaspoons garlic powder
  15. 2 teaspoons onion powder
  16. 1 teaspoon black pepper, plus for sprinkling
  17. 1 teaspoon dried thyme
  18. 1/2 teaspoon cayenne
  19. 2 cups buttermilk
  20. 2 pounds chicken thighs
  21. 1 stick (8 tablespoons) butter
  22. 1/2 cup brown sugar
  23. 1/4 cup dark rum
  24. 2 bananas, sliced
  25. 1/2 cup pecans, crushed

Instructions

  1. For the waffles: Fill a deep, heavy pot with 3 inches of oil; heat to 350 degrees F.
  2. Mix the dry ingredients and the wet ingredients separately, then mix them together. Cook in a waffle maker, then deep-fry for about 45 seconds.
  3. For the fried chicken: Mix all the dry ingredients in a large bowl. Pour the buttermilk into a second bowl. Pat the chicken dry and sprinkle generously with salt and pepper. Dip the chicken in the flour mixture, then in the buttermilk, and again in the flour. Deep-fry until the outside is crispy and the center is white.
  4. For the bananas foster sauce: Melt the butter in a medium skillet over medium heat. Add the brown sugar; stir until dissolved. Add the rum and flambe. Add the bananas and cook for 2 minutes. Pour over the chicken and waffles, and enjoy!
