Chocolate Stout Cupcakes

I love cooking with beer and there’s no exception when it comes to desserts. Of all beers, stout is the perfect one for desserts because of its distinct chocolate and coffee notes. Pairing it with actual chocolate is the obvious choice. These cupcakes are light in texture but heavy in the chocolate department. The white cream cheese icing reminds me of the creamy white head that Guinness is famous for.

Ingredients

  1. 3/4 cup unsweetened cocoa, plus more for dusting finished cupcakes
  2. 2 cups sugar
  3. 2 cups all-purpose flour
  4. 1 teaspoon baking soda
  5. Pinch fine salt
  6. 1 bottle stout beer (recommended: Guinness)
  7. 1 stick butter, melted
  8. 1 tablespoon vanilla extract
  9. 3 large eggs
  10. 3/4 cup sour cream
  11. 1 (8-ounce) package cream cheese, softened at room temperature
  12. 3/4 to 1 cup heavy cream
  13. 1 (1-pound) box confectioners’ sugar

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, whisk together the cocoa, sugar, flour, baking soda, and salt.
  3. In another medium mixing bowl, combine the stout, melted butter, and vanilla. Beat in eggs, 1 at time. Mix in sour cream until thoroughly combined and smooth. Gradually mix the dry ingredients into the wet mixture.
  4. Lightly grease 24 muffin tins. Divide the batter equally between muffin tins, filling each 3/4 full. Bake for about 12 minutes and then rotate the pans. Bake another 12 to 13 minutes until risen, nicely domed, and set in the middle but still soft and tender. Cool before turning out.
  5. To make the icing: In a medium bowl with a hand mixer, beat the cream cheese on medium speed until light and fluffy. Gradually beat in the heavy cream. On low speed, slowly mix in the confectioners’ sugar until incorporated and smooth. Cover with plastic wrap and refrigerate until ready to use. Icing can be made several hours ahead and kept covered and chilled.
  6. Top each cupcake with a heap of frosting and dust with cocoa.

I’ve made this twice now. The first time, I made cupcakes. The second time, I baked it in a 13″x9″. Delicious!

I’ll make it again, but next time, I’ll separate my eggs, make a meringue, and fold that into the batter to lighten it up a bit.

I didn’t have vanilla, so used bourbon … the tablespoon! not just a teaspoon … 🙂 … and I didn’t have Guinness, so I used Deschutes Obsidian Stout (12oz), which I could definitely taste.

My only disappointment was the frosting. I know better, but used the whole 3/4 cup of cream, and my frosting was too runny. Next time, I’ll whip the cream cheese, add the sugar (and more bourbon!) then use just enough cream to loosen it if necessary.

I made the suggested changes and the cupcakes were delicious!
– use room temp flat stout, eggs, softened butter.
– 1 tsp vanilla
– cream softened butter and 1/2 of sugar then add stout, vanilla,
– sifted flour and cocoa in dry ingredients.

I’ve made these according to recipe before and they are delicious. However, I see in the video he says to add 1 teaspoon of vanilla. The printed recipe says 1 Tablespoon! Which is correct?

This was great and so moist! I didn’t have a muffin tin, so I baked in a 9×13 and was perfect – same temp and 35 mins. The stout adds to the extra chocolate flavor and tenderness. Would totally make again and got several compliments.

I think this recipe achieves exactly the flavor that Dave Lieberman intended. Moist rich chocolate with a pop of Guinness. I used the extra stout- I don’t know if folks who complained of no Guinness taste used the regular kind. I have to admit that I am not a beer drinker, don’t like beer, so I may not make this again, but I made these for my daughter and her husband who are beer aficionados and I’m sure they will enjoy them. Made the frosting according to recipe – it was absolutely delightful! I will definitely use this frosting recipe again! So simple, but just the right accompaniment for a rich chocolate cake.

Quite tasty but I’m not a huge cream cheese frosting lover. I made a Bailey’s Irish Cream buttercream. Great for St Patrick’s Day! I will make them again.
