Ingredients
- 1 (8 ounce) skinless, boneless chicken breast
- 1 large egg
- 1 tablespoon heavy whipping cream
- 1 ½ ounces pork rinds, crushed
- 1 ounce grated Parmesan cheese
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon red pepper flakes (Optional)
- ½ teaspoon ground black pepper
- ½ teaspoon Italian seasoning
- 1 tablespoon ghee (clarified butter)
- ½ cup jarred tomato sauce (such as Rao’s®)
- ¼ cup shredded mozzarella cheese
Instructions
- Set the oven rack about 6 inches from the heat source and preheat the oven’s broiler.
- Slice chicken breast through the middle horizontally from one side to within 1/2 inch of the other side. Open the two sides and spread them out like an open book. Pound chicken flat until about 1/2-inch thick.
- Beat egg and cream together in a bowl.
- Combine crushed pork rinds, Parmesan cheese, salt, garlic powder, red pepper, black pepper, and Italian seasoning in a separate shallow bowl or plate.
- Dip chicken into egg mixture; coat completely. Press chicken into breading; thickly coat both sides.
- Heat a skillet over medium-high heat; add ghee. Place chicken in the pan; cook until no longer pink in the center and the juices run clear, about 3 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Be careful to keep breading in place.
- Transfer chicken to a baking sheet. Cover with tomato sauce; top with mozzarella cheese.
- Broil until cheese is bubbling and barely browned, about 2 minutes.

This was very good. The pork rind breading mix worked surprisingly well, my first time using it. I made my own tomato sauce using the Easy Keto Homemade Tomato Sauce from this site. I would stick with unflavored regular pork rinds to keeping the dish from being too salty, and I used crushed garlic instead of garlic powder. This one is a keeper.
SO good!!! My husband is pretty solid keto, well, dirty keto he says; me not so much, so dinner is a challenge! The seasoned pork rinds and parmesan crust was perfect. One tip, use a mini or full size food processor for the pork rinds. I had made my first batch of homemade tomato sauce- no sugar added. I made whole-wheat pasta and zoodles with mushrooms. I used my 12 inch stainless steel skillet for the chicken and to broil it. I removed the chicken, put the pasta and zoodles on the bottom, then chicken, then cheese, then sauce. Broiler for 5 minutes. It was perfect!!

This was delicious. I did not use heavy cream, just water for the egg dip. I salted the chicken breasts first before breading. I was using a home made arrabiata sauce, which is spicy, so I left the pepper flakes and black pepper out of the breading. I would have added it if I was using a less flavorful sauce. I love this recipe. For people who say they skip the sauce are missing out. 1/8 C of Raos tomato Basil is 3 carbs. So worth every delicious carb and easily fits my own keto journey with staying under 20 carbs a day. This is a great family meal and holds up great to take for lunch or freeze for later.
This recipe is Fantastic!! Everyone should learn to make this. My son who has difficulty swallowing took a bite and chewed the meat for the first time ever!! I thought I would share that experience, the recipe was really good. I used boneless chicken thighs instead, is what I had on hand.

Delicious! I didn’t have ghee so I used olive oil. Otherwise, made it just as is. It took me 25-30 minute from start to finish. Next time I think I will half the red pepper since my husband isn’t a spicy food fan. I’ll be adding this to our dinner rotation!
This is genuinely the best Keto recipe I have ever made. I made an allrecipes account specifically to praise how good it is. I’ve had a lot of bland food on Keto and this spiced it up quite a bit My only notes would be that you can make way more than just one chicken breast with the single egg (I guestimated on the pork rinds, so idk for that mixture). Also I had to put it in an over at around 170F to get the cheese to melt, but that might be because I used sauce from the fridge. Lastly chilli powder or paprika can be a good substitute for the red pepper flakes Overall, I could not recommend this enough for anyone on a Keto diet
My Family loves this. It’s the only recipe all of us (Even the picky eaters) love. It tastes like parmesan not pork rinds ,for those like me that see pork rinds and go ooh.
Easy to make, and very tasty. I served it over pasta zero. Wife liked it too!
Very satisfying as a substitute for the non-Keto version. I think I will add some finely chopped Italian Parsley next time. I did brine the chicken first to make it more moist. The pork rinds as bread crumbs will take some getting used to, but still it was a nice meal.

To Allison, who said tomato sauce is full of sugar, Rao’s, the one recommended in the recipe, is not. It’s sugar free and allowed on the keto diet plan. SO, ya don’t know everything about keto, darlin’.
