Roasted Beet Salad with Walnuts and Goat Cheese

Ingredients

  1. 3 medium beets, washed and trimmed
  2. 1/4 cup extra-virgin olive oil
  3. 2 tablespoons sherry vinegar
  4. 1 tablespoon honey
  5. 1 tablespoon minced red onions
  6. 1/2 teaspoon Dijon mustard
  7. 4 cups baby spinach
  8. 1/2 cup crumbled goat cheese
  9. 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Wrap the beets in foil packets and roast in the oven until tender, about 1 hour. Open the foil packets and let cool. Once cool enough to handle, peel using a paper towel, then dice.
  3. In a medium bowl, add the olive oil, vinegar, honey, red onions and Dijon and whisk together. Add the beets and spinach to the dressing and toss to coat. Top with the goat cheese and walnuts.

Simply delicious! I didn’t know goat cheese can compliment any salad so delectably. Dressing is tasty, will make it again. Used butter lettuce, green leaf lettuce and arugula that already available. While roasting beets, I roasted some small potatoes to eat on the side. Next time, I would grill some shrimp to top the salad. Gets 5 stars from me!!

I didn’t make the dressing. I used Balsamic Dressing and Marinade from Litehouse. I also don’t like walnuts so we used cashews. But other than that, this was SOOOOO good!!

Way over dressed, found it oily. I would double the cheese and half the dressing. The cheese part is a personal preference, others may not want to make that change.

Always been a fan of beet salad, and this is a good version. I use ready made beets, faster and less mess. I often use feta cheese, which is also goat cheese.
