Turkey Meatloaf With BBQ Glaze

Ingredients

  1. 3 teaspoons olive oil
  2. 2 small onions, finely chopped
  3. 3 tablespoons chopped fresh parsley
  4. 1 carrot, chopped
  5. 1 1/2 pounds ground dark meat turkey
  6. 3/4 cup seasoned breadcrumbs
  7. 1/4 cup ketchup
  8. 1 large egg, whisked
  9. Salt and freshly ground pepper
  10. BBQ Glaze, recipe follows
  11. 6 slices bacon
  12. One 14-ounce bottle ketchup
  13. One 12-ounce bottle chili sauce
  14. 1/2 cup packed brown sugar
  15. 1 teaspoon dry mustard

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a small skillet over medium-low heat, add 2 teaspoons of the oil and heat until shimmering, about 2 minutes. Add the onion and cook until softened and brown, about 10 minutes. Add the parsley and cook another 1 to 2 minutes. Remove the mixture and set aside to cool. Add the remaining teaspoon of oil to the same skillet. Add the carrots and cook until softened, about 5 minutes.
  3. Place the ground turkey, breadcrumbs, ketchup, egg, the onion mixture, 1 teaspoon salt and some pepper in a food processor and pulse until fully combined. Transfer to a large bowl and add the carrots. Mix until combined. Form into a loaf and transfer to a casserole dish or baking sheet. Using a pastry brush, spread the BBQ Glaze over the top. Drape the bacon over the loaf in a crisscross pattern, tucking the ends underneath. Brush more glaze over the bacon layer. Bake until firm and cooked through, 55 to 60 minutes. Let rest for 5 minutes before serving.
  4. Stir together the ketchup, chili sauce, brown sugar, dry mustard and 1/3 cup water in a large saucepan. Bring to a boil, stirring to dissolve the sugar. Remove from the heat and set aside.

Every since I saw Trish make this on her television show I’ve been making this recipe. It is the only meatloaf recipe I’ll make; can’t decide whether I like it more as the main entree or simply having it as a leftover so we can make meatloaf sandwiches. LOL

This recipe is DELISH!!! Made pretty much to recipe, but I shredded the carrot and sautéed with the onion instead of doing it separately. Also seasoned with S&P, granulated garlic, and Worcestershire sauce before adding the
parsley. I had some crispy fried onions that I pulsed in the food processor and added that to the seasoned breadcrumbs (about 1/4 cup). I also added some acv to the BBQ sauce as suggested in another review, along with a pinch of salt, granulated garlic, onion powder, a pinch of ceyenne, and a dash of Worcestershire sauce. This dish was out of the park for my picky family. Thanks, Trisha! Love your show!

This was just okay. I can’t see where the bacon added anything to the overall taste of the meatloaf. The overall meatloaf seemed to be lacking some type of WOW flavor.

Hands down the best meatloaf I’ve ever had! I’m not usually one for meatloafs but thought I would give it a try and boy am I glad I did ! My husband , who NEVER eats meatloaf had seconds Only Tweak I made was I added about a tablespoon of cider vinegar to the glaze for balance. Will make this again and again ! Thanks Trisha

I hate the texture and rubbery feel of ground turkey but when I saw all the ingredients were blended in a food processor I knew it would work! And it did!! It had excellent flavor and was moist-my husband commented that it was almost too moist!! This is a keeper
