Ingredients

  1. 2 quarts (4 pints/1/2 gallon) coffee ice cream, softened
  2. 2 cups chopped pecans
  3. 2 quarts (4 pints/1/2 gallon) chocolate ice cream, softened
  4. 2 1/2 cups chocolate-coated toffee pieces
  5. 50 chocolate sandwich cookies
  6. 1 1/2 sticks (12 tablespoons) butter, melted
  7. 2 quarts (4 pints/1/2 gallon) vanilla ice cream, softened
  8. 2 1/2 cups chocolate shell ice cream sauce, such as Magic Shell
  9. Store-bought caramel sauce, warmed, for serving

Instructions

  1. Line an 8-quart bowl with overhanging plastic wrap.
  2. Tip the coffee ice cream into the bowl and smooth the surface. Sprinkle over the chopped pecans and freeze until the ice cream is firm, at least 1 hour.
  3. Tip the chocolate ice cream into the bowl and smooth the surface. Sprinkle over the chocolate-coated toffee pieces and freeze until firm, at least 1 hour.
  4. Meanwhile, make the crust: Put the sandwich cookies in a food processor and pulse until fine crumbs. Pour in the melted butter and pulse to combine.
  5. Tip the vanilla ice cream into the bowl and smooth the surface. Tip the crust on top of the vanilla ice cream, spread it evenly and press down firmly. Freeze again until completely set, 4 hours and up to overnight.
  6. Turn out the pie onto a board or serving platter lined with 4 squares of parchment arranged so that the paper overhangs the edges of the platter. Peel off the plastic wrap and pour over the chocolate shell ice cream sauce to coat the entire pie. Carefully slide out the sheets of parchment and discard.
  7. To serve, cut big slices of pie, drizzle over some warm caramel sauce and stick a steak knife into the center standing up.

New family favorite!! I’ve made it in many variations and sizes. My granddaughters now request their own personal size for their birthday. So now I make a mini version also I’ve used the chocolate fudge magic shell too, it works good also.

Made it for my granddaughter’s birthday.  Was really yummy and popular.  My only problem was that the crust was so thick and so hard we couldn’t cut through it.  Maybe next time with a thinner crust and no butter – just cookie crumbs mashed into the top layer of ice cream.  Used two bottles of the chocolate topping and could have used a third……….

This dessert was fabulous! Yes, a bit pricey, but it was for a special occasion. I can not wait for our next “special occasion”. I made this for a party of 10 ~ hoping for leftovers, but it was gone before anything could really melt.  It will be fun to experiment with other flavor combinations.One of the reason I love The Pioneer Woman’s recipes is because they are consistently good, especially feeding a large gathering.  I reserve many of them for special occasions because of the amount they make (my freezer is microscopic), and because of the calorie content.  But look at the group she generally cooks for ~ hard working, active people; non of whom are the least bit overweight. Most simply don’t have families that are as active as the Drummond’s anymore.  But if you do (have the size and active individuals) then you are truly blessed!  Otherwise, use her scrumptious recipes when you can.

Love this recipe idea! We made only 2 layers (vanilla and chocolate) I put a layer of hot fudge topping and pecans in the middle. It was amazing everyone loved it. Thank you for sharing! Can’t wait to try new flavor combinations in the future.
