Ingredients
- ½ cup butter
- 2 cups white sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- ¼ cup evaporated milk
- 1 tablespoon cornmeal
- 1 tablespoon distilled white vinegar
- 1 (9 inch) unbaked pie shell
Instructions
- Preheat the oven to 425 degrees F (220 degrees C).
- Mix butter, sugar, and vanilla together in a large bowl. Mix in eggs, then stir in evaporated milk, cornmeal, and vinegar until smooth. Pour into pie shell.
- Bake in the preheated oven for 10 minutes, then reduce heat to 300 degrees F (150 degrees C) and continue to bake for 40 minutes. Let cool before cutting.

I cut the sugar down to 1 1/2 cups.
I have made this pie twice and I could kick myself for making it a second time! This pie will not set. I adjusted the baking time and temperature and it’s still a swampy mess. Never again.
It can look like this and still turn out! As with any recipe online, definitely scroll through these reviews: I used 3 eggs + 1 yolk, and half a cup less of sugar (used 1c white sugar, 1/4c Splenda brown sugar mix), and it turned out great. Next time I’ll use HALF the stick of butter because it’s too greasy for my preference. Flavor’s fantastic though and if you let it set in the oven as it cools, you’ll have a perfect pie every time! Oh, and I used Jiffy cornbread instead of cornmeal because that’s what I had. It worked!
OK. this can be great BUT it needs some work. I, too, made “soup” the first time. By reading up and seeing YouTube videos, I stumbled thru trial and error and found what works for ME (and perhaps my oven). I went with 2 TBLS of cornmeal and 325F on the longer bake time and then it came out great.
The crust was phenomenal, but the filling was a little runny. It still tasted delightful. I may need to test different temperatures, times and ingredients, but this recipe is a good base for a chess pie!

My Dad loves custard pies so while on an extended visit with him, I baked him an egg custard pie, a buttermilk pie, and this pie. When all was said and done, he said this was the best of all 3.

SUPER EASY to make. Very sweet and tastes wonderful.
I reduced sugar to 1 and 3/4 cup and butter to 1/4 cup and used whole milk instead of evaporated milk and still came out oh so good! This is a good recipe that I think you can tweak a little bit to your personal liking concerning sugar and butter (putting a 1/2 cup of butter in a pie was just too much for me personally lol) and it still comes out good as long as you don’t mess up ratio’s too much because ultimately it’s all the eggs that holds everything together. I wish I had read all of the reviews before doing this recipe. I followed the instructions carefully and ended up with a big pie shell of soup. Thought maybe my oven was broken but my chocolate chess pie recipe I got from another website turned out just fine. Bottom line is all the tips in the reviews should be in the recipe. I don’t recommend this recipe at all, as easy as it may seem.

Wonderful and festive pie! we made it for dessert after our Christmas dinner. I made some changes after reading the reviews and the pie turned out beautifully. I used one cup white granulated sugar and one cup brown sugar. I used three whole eggs and one yolk. I also made a homemade crust. I left it in the oven after baking to cool with the oven and it was perfectly set with no cracks. It was fun to try something new!
Made it! It turned out great. I think the key to it setting up was total cool down. About 4 hours. For first time EVER baking a pie, I couldn’t have been happier.
Waste of time. It’s a puddle. Followed it completely by the recipe. I put it in there longer just for the top to burn and still be liquid inside.

Very simple and easy to make. I put my oven on 350 and put the pies(I made two) on the middle rack. I let it bake for about 40min then moved it to the top and broiled it for it become a little more brown. I then turned off the oven and let it sit for another 15min. I would advise to use half the sugar and I also added very little all purpose flour.

I made this pie, but I used brown sugar. I cooked the pie according to recipe. The pie crusted on top but underneath the crust the pie was runny. So I baked it 15 more minutes. I let it cool but it was runny!!??. Any suggestions? Please!!!! The flavor is good. But it’s runny!!!
