Ingredients

  1. 1 tilapia fillet reserved from Fish Taco Recipe
  2. 1 small onion, chopped
  3. 1 Roma tomato, chopped
  4. 1 small jalapeno, thinly sliced
  5. 1 small orange, juiced
  6. 1 lime, juiced
  7. Cooking spray
  8. 4 corn tortillas
  9. Kosher salt
  10. 1 tablespoon chopped cilantro leaves

Instructions

  1. Cut the reserved tilapia into 1/2-inch chunks and put them into a glass bowl. Top with the onion, tomato, and jalapeno. Pour in the orange and lime juices and stir gently to mix. Cover and refrigerate for 1 hour. Don’t let it marinate longer or the fish will turn mushy.
  2. While the fish is marinating, heat the oven to 350 degrees F. Spray a baking sheet lightly with cooking spray. Cut the tortillas into 6 wedges and spread them on the baking sheet in 1 layer. Bake in oven until lightly browned and crisp about 12 to 15 minutes. Sprinkle with salt.
  3. Serve the ceviche in small bowls garnished with the cilantro and with the tortilla chips on the side.

Instead of the orange I used lime and lemon. From now on though I think I’m just going to use the lemon the lime was too sour.

This recipe is wonderful and easy! My husband loves Ceviche and I was scared to make it but this was very easy and He loved it. The only thing I did different was after it marinated everything I pulsed it in the food processor a couple times.

You don’t use the fried fish from the Fish Taco recipe. You reserve a raw piece of the fish for this recipe. You set aside a piece of fish before you use the rest for the tacos. The raw fish is what you use for this round 2 recipe.

You can’t use leftover fried fish and call it ceviche. For ‘real’ ceviche you use citrus juice to “cook” the fish. This awful stuff was nasty and soggy.
