The Most Perfect Italian Sub

This is the one Italian sub to rule them all. Follow my lead and you will create the most perfectly balanced Italian sub/grinder/hero/hoagie, fit for a king.

Ingredients

  1. 1/2 cup red wine vinegar
  2. 1 tablespoon dried Italian seasoning
  3. 1 teaspoon Dijon mustard
  4. 1/2 teaspoon sugar
  5. 1/2 cup extra-virgin olive oil
  6. Kosher salt and freshly ground black pepper
  7. 4 large and long Italian sub rolls (something very light but with a crackling crust)
  8. 8 thick slices sharp provolone
  9. 4 ounces mortadella, sliced very thin
  10. 4 ounces Genoa salami, sliced very thin
  11. 4 ounces capicola, sliced very thin
  12. 2 Roma tomatoes, sliced very thin
  13. 4 cups shaved iceberg lettuce
  14. Hot giardiniera, for serving

Instructions

  1. For the Italian sub dressing: Whisk together the vinegar, Italian seasoning, Dijon and sugar. Slowly rain in the olive oil, whisking, until everything comes together smoothly. Season with salt and pepper. Place in a squeeze bottle and store in the fridge for up to a month. Shake before using.
  2. For the subs: Split the rolls in half across the equator. Squeeze a liberal amount of the sub dressing on both interior slices of the bread. Now let’s build. First layer, the sharp provolone, then fluff and ribbon the mortadella, then the Genoa and then the capicola. Layer on the tomatoes and then the lettuce. Spread with the giardiniera. Wrap in white butcher paper, cut in half, and then wrap again. Mangia!

This is the best Italian sub sandwich ever. I have made it several times now and my friends and family also love it. It just makes sense. It all holds together and the flavors are there. I may never by a Italian deli sub elsewhere again.

Of course the sandwich king nailed it. The only thing I did differently was I put the sandwich under the broiler on low to melt the cheese on one half of the bread and heat the meat on the other, and then added the tomatoes, giardiniera and lettuce after it came out. So good, easy and will make again. Hard part, I had to go to four different stores to actually find the meat in the deli.

Very good tasting sandwich. Although I had to substitute the veggie relish stuff with sweet salad peppers it was the most tasty sandwich I ever had.
