Ingredients
- Nonstick cooking spray
- 4 cups baked potato chips
- 1/2 teaspoon cayenne
- 1 cup lowfat buttermilk
- 1/2 cup plus 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1 to 2 large Vidalia onions, peeled
Instructions
- Preheat the oven to 450 degrees F.
- Spray a baking sheet slightly with oil and set aside. Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside. In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside. Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.
- Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat. Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip crumbs and place on baking sheet. Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.

Another reason not to use canola: unless it’s organic, it’s probably genetically engineered. Grapeseed (no relation) oil is a great substitute as it is neutral in flavor and stands up to high heat.
I NEVER use Canola oil. There is no such thing as a canola plant. ‘Canola oil’ is made from rapeseed, which really stinks! They ‘over’ process (aka, bleach) this ‘oil’, until the smell is no longer present, bottle it and sell it as healthy ‘oil’ alternative. But, it really isn’t. Sorry! I use EVOO instead. Canola oil will not leave a good flavor behind, at all! The calories can be significantly cut down as well by using panko bread crumbs (instead of the high/extra starch of the potato chips) and instead of using buttermilk, use 1 c. milk and 1T vinegar for the substitute and a variety of others spices can be added to the panko bread crumbs for a better taste as well, especially for those who do not like cayenne. This recipe could have been research a bit further and a better taste be the result. Sorry

I am posting one star only because it wont go any lower. These are HORRIBLE! The coating falls off if you can get it to stick at all and it turns into a bland, gross mess. Not to mention how UN-healthy and loaded with trans fats the baked chips are! Looking at food networks so called nutritional info they forgot to include the fats from the chips because everything is listed as 0 and as we all know this cant be true.(If I remember correctly baked are either 1/2 or 1/3 the fat of regular chips but that still does equal 0) I used this recipe http://www.foodnetwork.com/recipes/jeff-mauro/oven-fried-onion-rings-recipe.html?ic1=obinsite
substitited rice flour for the AP flour and they came out perfect!
these were awful. made them for super bowl sunday with my chicken wings and it was embarrassing to serve this mess. Don’t use this recipe! I’m throwing it away. Hey Food Network, this was a BIG DISAPPOINTMENT! I have to give it at least 1 star to get the review to post, but honestly it’s meant to be a negative 1 — that’s -1.
This was awful, threw them out. My recipe calls for soaking in buttermilk seasoned with cayenne and pepper (soak for at least 4 hours). Then dusting with corn meal and yes fry them. How often does one make these?Don’t skimp on the frying, just drain them well.
So a serving is only 3 onion rings?
