Ingredients
- 2 (8 to 9-ounce) New York strip steaks
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- 3 cups canned Great Northern or pinto beans, rinsed and drained
- 1/3 cup olive oil
- 2 tablespoons fresh lime juice
- 2 garlic cloves, minced
- 2 tablespoons chopped scallions, white and pale green parts only
- 3 tablespoons chopped fresh cilantro leaves
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper
Instructions
- Steaks: Brush the steaks with olive oil; sprinkle liberally with salt and pepper, to taste. Heat a heavy saute pan over medium-high heat. Add the steaks and cook for about 4 minutes per side for medium-rare. Remove the steaks to a cutting board and let rest for 10 minutes. Slice crosswise into thin strips. Set aside.
- Bean salad: In a large bowl, combine the beans, olive oil, lime juice, garlic, scallions, cilantro, and oregano. Mix gently. Season with salt and black pepper, to taste.
- Put the bean salad on a platter and arrange the warm steak slices on top.

This has turned into one of our favorite “go to” meals. Delicious and so easy!
I made this on Saturday and Monday. Even my picky 9 year old liked it. Since I didn’t have scallons, I added shallots which tasted great. JUST A NOTE: Don’t substitute lemon for lime. On Monday I thought I ran out of lime so I used lemon. I also used white beans instead of pinto beans. When I tasted it, it didn’t taste the same like when I made it on Saturday. It was bland. The white beans didn’t give it enough favor and the lemon was tart. So I decided to look into my refrigerator to see how I can help this salad and I found half a lime. And I also found a can of pinto beans in my pantry. Hurray! So I added pinto beans with the white beans and added the lime juice. What a difference! I found the favor I was looking for.
Delicious and very simple. I doubled the recipe and ended up with too much liquid, so next time I’ll just use 1.5x the liquid with double the other ingredients. We also thought it could use some crunch and will add chopped celery when making it again.
This is a really good dish. The beans are wonderful, the fresh lime juice really adds to this. Served with a nice warm Steak, DELISH!

Very good! I don’t recommend adding any garlic, even if you love it. I did and it was a bit overpowering but still great tasting combo of flavors and easy to make
