Banana-Yam Casserole

Ingredients

  1. 2 tablespoons unsalted butter, for greasing the baking dish
  2. 1 1/2 pounds yams, peeled and cut lengthwise into 1-inch thick slices
  3. 5 ounces (about 32) sweetened round crackers (recommended: Maria Crackers), or graham crackers
  4. 3/4 cup whole almonds, coarsely chopped
  5. 1 teaspoon ground cinnamon
  6. 1/2 teaspoon salt
  7. 6 tablespoons (3/4 stick) chilled unsalted butter, diced
  8. 4 large ripe but firm bananas, peeled and halved lengthwise
  9. 1 (10 1/2-ounce) bag mini marshmallows

Instructions

  1. Preheat the oven to 400 degrees F. Coat the bottom of a 13 by 9 by 2-inch glass baking dish with 2 tablespoons butter. Set aside
  2. In a heavy medium pot add the yams and cover with cold water. Bring to a boil over high heat. Reduce the heat and simmer until tender, about 10 minutes. (The color of the yams will turn brighter).
  3. Meanwhile, put the crackers, almonds, cinnamon, and salt in a food processor and pulse a few times to combine until coarse but not fully ground. Add 6 tablespoons butter and pulse until the mixture forms lumps slightly larger than peas. Refrigerate the streusel topping until ready to use.
  4. Spread half of the bananas and yams in 1 layer in the bottom of the prepared dish. Sprinkle with half of the streusel and half of the marshmallows. Repeat to make 1 more layer. Bake until the marshmallows are golden, about 25 minutes. Serve warm.

Not sure if this is supposed to be a dessert or not, but it is sweet enough to be one.  I made mine in an 8×8 inch pan with the following ingredients:

1.5 bananas
3 slices of yams
7 oz vanilla wafer cookies
The rest of the ingredients I did the same as the original recipe.  I only did one layer instead of two since my pan couldn’t hold any more than that.  I used a blender, and it was difficult to blend all the ingredients as instructed in the original recipe.  Blending the ingredients in small portions helped, as well as melting down the butter.  I changed the bake time to no more than 20 minutes because the marshmallows were already getting burnt by that point.

Just made this for Thanksgiving, came out great. I took the advice from some of the other reviews and increased the amount of yams to 3lbs and it worked out perfect. I also used a mixed amount of pecans and almonds, since pecans is pretty traditional for this dish in the south. I also added cinnamon and nutmeg and chopped pecans after the last layer of marshmallows to add texture to the crust.
