The best pie I’ve ever had is this coconut custard pie! Serve with whipped cream that hasn’t been sweetened and nutmeg powder.

Ingredients

  1. 1 ½ cups white sugar
  2. ½ cup butter
  3. 2 large eggs
  4. 2 tablespoons all-purpose flour
  5. 1 cup milk
  6. 1 cup flaked coconut
  7. 1 teaspoon vanilla extract
  8. 1 (9 inch) unbaked pie crust
  9. 1 tablespoon flaked coconut

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Beat together sugar, butter, and eggs in a large bowl with an electric mixer on low speed. Blend in flour. Mix in milk, 1/2 cup at a time. Add 1 cup coconut flakes and vanilla; mix well.
  3. Pour filling into unbaked pie crust. Sprinkle top with 1 tablespoon coconut flakes.
  4. Bake in the preheated oven until filling is set, 40 to 50 minutes.

Really glad I found this recipe. I will definitely make again and again. I read others’ reviews and used a few of their pointers. I used 3 eggs instead of 2. I only used 1 cup of sugar (we like desserts that are a little less sweet AND my husband is borderline diabetic. I used coconut milk instead of whole milk – but when I make it again, I probably will use half and half. I also used unsweetened coconut in the filling but sweetened on the top (probably more like 1/4 Cup.

Recipe was quick and easy. I followed the modified recipe with the reduced sugarand used evaporated milk and 1 extea egg. It was so easy and delicious, I made 3. It’s my new dessert. I gave it a 4 because of the modifications.

My wife never wanted to try this, now it’s one of her favorite deserts! Like others I cut the sugar to 1 cup, and it’s still plenty sweet. I also substitute half and half for the milk, and use 3 TBS of flour. Simple to make and delicious.

I followed the recipe step by step. It was darker than I expected, way too sweet and never set. I took it out of the oven after 45-50 mins, saw that it was wobbly. Let it cool, then set it in the fridge. After work took it out, still liquid. Set it back in the oven for another 10 mins. Still not much difference. I won’t be outdone! Will adjust with less butter, less milk, less sugar, a little more flour & unsweetened coconut. For now we’ll add ice cream to what we have but won’t throw it away!

Way too sweet I would just use a cup of sugar or 2/3 don’t make it per this recipe otherwise you’ll be eating nothing but sugar

I only used 3/4 cup of sugar. I also used 1/2 cup of whipping cream and 1/2 cup of coconut milk. I added a tsp of nutmeg. I also creamed the butter with the sugar first and separately whipped the cream till it was half way to whip cream and then added the coconut milk. Combined the creamed butted and milk along with the other ingredients.

Great recipe , the only adjustments I made is I cut the sugar back to 1 cup and used coconut milk and coconut extract instead of regular milk and vanilla extract.
