Ingredients

  1. 1 1/2 cups granulated sugar
  2. 1/3 cups brown sugar
  3. 3/4 cups vegetable oil
  4. 2 eggs
  5. 2 cups flour
  6. 3/4 teaspoons baking powder
  7. 3/4 teaspoons baking soda
  8. 1/2 teaspoon salt
  9. 2 1/2 teaspoons cinnamon
  10. 1 1/2 cups finely chopped zucchini
  11. 3/4 cups walnut pieces

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine sugars, oil, and eggs and mix. In another bowl, mix flour, baking powder, soda, salt, and cinnamon. Add to sugar/oil/egg mixture to moisten. Carefully fold in zucchini and nuts. Divide mixture into 2 greased loaf pans. Bake for 55 minutes or until done.

Pretty good, but too sweet and too oily. Would probably cut the amount of sugar in half and substitute some of the oil for applesauce. Loaves were small which didn’t bother me as I love the crust. I would try shredding or grating the zucchini next time.

Worked out great for me! I used just under a cup and a half of zucchini purely because my zucchini was a bit too small to yield a full cup and a half. Didn’t seem to matter. I swapped walnuts for chocolate chips. Love it!

Loved this but added 1 cup of nuts. Waited a minute to let zucchini shed water. It’s the best ever. Not sure why others had a problem. I grated my fresh zucchini. Maybe that’s the trick

Easy recipe but too much sugar; I cut each in half and found it much more flavorful.

I made a few adjustments, way less sugar. 1/3 c brown and white each. Cut oil to 1/4 c added 3/4 c applause. Applesauce is great substitute in these kinds of breads. More cinnamon, if you love cinnamon. I do. Sprinkle a dusting of cinnamon sugar on top just before baking.

I added buttermilk yo my batter because it was to thick it came out delicious that is what my kids say
