Oatmeal Scotchie Cookie

Ingredients

  1. 1 cup soft butter
  2. 1 cup packed brown sugar
  3. 1/2 cup granulated sugar
  4. 2 medium eggs
  5. 1 teaspoon vanilla extract
  6. 1 1/2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 2 1/2 cups rolled oats
  10. 1 cup butterscotch chips
  11. 3/4 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease cake shaped pan.
  2. Using an electric mixer, cream butter, brown sugar, granulated sugar, eggs and vanilla together. Stir in flour, baking soda and salt. Add remaining ingredients and mix well. Scoop into pan. Bake for approximately 20 to 25 minutes. Cool on baking sheet or cooling rack.

EASY, 1 bowl mix. Made this for my son & his room mate. 9 x 13 pan, and cut into squares. They were excited, and I am sure they did not make it home. 2 hr drive.

This recipe is FANTASTIC! Sweet, nutty, chewy and so delicious. I baked it in a 13×9 pan and cut it into bars. I did find, however, that I had to increase the cooking time to 35-40 minutes. Maybe it was just my oven, but at 25 minutes the batter wasn’t cooked. Also, the first time I made it I mixed the pecans into the batter. The second time, I did not in deference to a couple people who didn’t want the nuts. So I stirred some chopped pecans together with some butterscotch chips and sprinkled the mix over half of the batter. Everyone was happy!

This is similar to the basic oatmeal choc chip cookie recipe. In order for it to hold a cookie shape, use only 1 stick of butter and 1 egg. More than that and the cookie will be flat.

I was so excited to try this cookie but it came out flat and not that great tasting. I did not use a cookie pan but instead just made regular cookies so that might have been the problem. They expanded across the whole pan!

My daughter whipped these up one evening. She made some with only pecans, some with butterscotch chips/pecans and some with peanut butter chips/pecans. They were all great! They were made into individual cookies. We may add cinnamon next time!

My family loved this recipie. Next time I will make it in cookie form. The cake took a lot longer to cook than stated on site. May have used to small of pan.
