Grilled Wedge Salad Skewers

Ingredients

  1. 3 tablespoons crumbled blue cheese
  2. 3 tablespoons sour cream
  3. 2 tablespoons mayonnaise
  4. 2 tablespoons buttermilk or milk
  5. 1 teaspoon white wine vinegar
  6. Kosher salt and freshly ground black pepper

  8. 1 head romaine lettuce, cut into 2-inch pieces
  9. 18 cherry tomatoes
  10. 1 tablespoon olive oil

Instructions

  1. Combine the blue cheese, sour cream, mayonnaise, buttermilk and vinegar in a small bowl and stir until well combined. Season to taste with salt and pepper.
  2. Preheat a grill or grill pan for cooking over medium-high heat. Thread a few pieces of lettuce onto a skewer, followed by a cherry tomato; repeat twice so that you have three lettuce clusters and three cherry tomatoes on the skewer. Repeat with the remaining skewers.
  3. Brush both sides of the skewers with the oil and sprinkle lightly with salt and pepper.
  4. Grill until lightly charred, turning once, 1 to 2 minutes per side. Arrange the skewers on a platter and drizzle with the blue cheese dressing. Serve immediately.

Looks great, but when she made it, she left out the white wine vinegar, buttermilk and the salt and pepper in the dressing or it was cut out of the show.
