Cranberry Salad

Ingredients

  1. 1 (3-ounce) package cherry or strawberry gelatin
  2. 1 cup hot water
  3. 1/2 cup cold water
  4. 1/2 pound cranberries
  5. 3 apples
  6. 2 oranges or 1/2 cup crushed pineapple
  7. 1/4 cup nuts, chopped
  8. 3/4 cup sugar
  9. 4 cups salad greens

Instructions

  1. Dissolve gelatin in hot water, then add cold water. Cool mixture and set aside.
  2. Wash and grind cranberries. Pare and chop apples (and oranges, if using) into small chunks.
  3. Stir together the ground cranberries, chopped apples and oranges (or pineapple) nuts, and sugar.
  4. Add to slightly thickened gelatin mixture; then pour into a mold and chill until salad is firm and holds its shape. Unmold onto salad greens.

I thought this was too sweet. Couldn’t taste the cranberry much, and felt the jello to fruit ratio was off. I haven’t made jello for years. This looked so good…disappointed.
