Chicken and Grape Salad Snack Wrap

Yield: 1 quart salad

Ingredients

  1. 2 cups diced or shredded roasted, grilled or poached chicken meat
  2. ½ cup chopped celery
  3. 1 Tablespoon minced shallots
  4. ¾ cup coarsely chopped pecans or walnuts
  5. 1 1/3 cups halved grapes, sliced lengthwise
  6. 10″ flour tortillas
  7. ½ cup light sour cream
  8. 1 tablespoon + 1 teaspoon Dijon-style mustard
  9. 2 teaspoons fresh lemon juice
  10. 1 Tablespoon grated lemon zest
  11. ½ teaspoon salt
  12. ¼ teaspoon pepper

Instructions

  1. Combine chicken, celery, shallots, grapes and pecans in bowl. Mix dressing ingredients thoroughly and add to chicken mixture. Chill until ready to serve. To make wrap, spoon ¾ cup of salad mixture onto middle of tortilla; roll it into a wrap and cut in half. Serve one half wrap sandwich with grapes and veggies for a hearty snack.
