Ingredients
- Salad oil
- 1 carrot, small to medium dice
- 2 stalks celery, small to medium dice
- 1 medium onion, small to medium dice
- 2 pounds ground beef
- 2 eggs
- Salt and freshly ground black pepper
- Dash hot sauce (recommended: Tabasco)
- Dash Worcestershire sauce
- 3 slices bread
- 1/2 cup seasoned Italian bread crumbs
- Ketchup
Instructions
- Preheat oven at 375 degrees F.
- In a medium-sized saute pan, put 2 dribbles of salad oil and heat over medium-high heat.
- Add the carrots, celery, and onions and saute, about 5 minutes. Put aside and let cool.
- In large bowl put the carrot mixture, ground beef and remaining ingredients, except for the bread, the bread crumbs and ketchup. Soak the bread in cold water, then squeeze water out (like a sponge) and drain it. Add to the ground beef and mix. (A stand mixer is may help make it easier.) Add the bread crumbs and mix. Roll into firm loaf, spread ketchup over the top, and place into preheated oven for approximately 45 to 55 minutes, or until cooked through. Take out and serve hot.

Delicious meatloaf! Used 1 pound sirloin and 1 pound ground pork. Didn’t think I’d like the ketchup on top, even though it’s pretty traditional, but it was so good. Quick to make and very tasty.
I doubled the carrots and celery. I used a pretty big onion to enhance the flavor. Make sure to add enough salt as it will come out bland if you don’t. The texture of the meat is excellent. After my minor adjustments, the meatloaf was excellent! If you make it exactly as stated, it will come out bland.
Love this recipe and I use it whenever I make meatloaf…I sometimes will add green peppers….always was a fan of ketchup topping so this is a family favorite and easy to make!!

WHERE’S BOBBY’S MEATLOAF RECIPE??? The Collucci meatloaf was a decent Mom’s meatloaf. A much better recipe:
1 pound lean ground beef
1 pound ground Italian sausage (out of casing
1/2 teaspoon salt
1 teaspoon pepper
2 packages dry onion soup mix
2 eggs, beaten
1 cup COOKED, buttered rice
1 cup ketchup
2 Tablespoons Worstershire sauce
1 teaspoon Dijon mustard
1 large onion, chopped
3 cloves garlic, minced
1 (8 ounce bag frozen chopped broccoli
1 large can French Fried Onion Rings
2 cups skim milk
Mix all together. Place into a large loaf pan and BAKE at 350 F. for 1 hour. FANTASTIC!!!

They key with this recipe is adding the veggies after sauteed. Makes the recipe one of a kind, and the best meatloaf ever! all of my kids ask for it (7,4, and even the 1 year old loves it!! My husband asks if its a new recipe every time I make it!
My father-in-law called it killer.
I made this last night and everyone loved it. The only tweaks I made were soaking the bread in milk, chopping the veggies very fine and adding 1 teaspon of Emeril’s Essence. Served with mashed potatoes and mushroom gravy. Excellent classic meatloaf. I’ll definately make it again.
Changed it up a little for my taste
3/4 lb each ground beef, ground pork, ground veal
carrot, celery and onion finely grated for better blended it flavor
soaked bread in milk instead of water
topped with jar of chili sauce before baking.
Sometimes I add smashed corn chips in place of bread crumbs.
