Ricotta Pie

Ingredients

  1. 2 cups all-purpose flour
  2. 1 tablespoon sugar
  3. 1 teaspoon baking powder
  4. 1/4 teaspoon salt
  5. 1/2 cup cold vegetable shortening, cut into bits
  6. 1 large egg, beaten lightly
  7. 2 to 3 tablespoons ice water
  8. 1 1/2 pounds ricotta, drained well
  9. 3/4 cup sugar
  10. 5 large eggs
  11. 1 tablespoon vanilla extract
  12. 1/2 teaspoon ground cinnamon
  13. 1/2 cup diced candied fruit
  14. 1/2 cup semisweet chocolate chips

Instructions

  1. To make the pie crust:
  2. Into a bowl, sift the flour, sugar, baking powder, and salt. Add the shortening and blend until the mixture resembles coarse crumbs. In a bowl, whisk together the egg and 2 tablespoons of the ice water. Add the egg mixture to the flour mixture and toss to combine, adding more water, if necessary, to form a dough. Chill the dough, wrapped in plastic, until firm.
  3. On a lightly floured surface, roll out the dough into a circle 1/8-inch thick and fit it into a 9-inch pie pan. Crimp the edge, prick the bottom, and chill while making the filling.
  4. Filling:
  5. Preheat the oven to 350 degrees F.
  6. In a large bowl with an electric mixer, beat the ricotta with the sugar until smooth. Add the eggs, 1 at a time, beating well after each addition. Beat in the vanilla and cinnamon. Stir in the candied fruit and chocolate chips. Pour the filling into the pie shell.
  7. Bake the pie for 45 minutes, or until just set. Let cool and chill.

Very close to what my Nana made. I recommend chopped or grated chocolate in place of chips. That was how my Nana made it, and the chocolate did not sink to the bottom and, instead, was dispersed throughout.
We always topped it with a lattice on top, too!

It was definitely just okay. The fruit and chocolate all sank to the bottom and made the top simple, but not as pretty as i thought it would be. the candied fruit tasted funny, but i liked the chocolate chips. Splurge on good chocolate chips. I used pre-made dough and it turned out really well. the pie is good somewhat warm.

This had a very nice flavor. It wasn’t quite the texture that I expected. It was a little more ‘custard-y’ that I am used to. Still very tasty. I did not put in candied fruit.

This was so easy to make. i made it for the guys at my husbands work & they all loved it. I’m so glad they saved me a piece. I used store bought crust & left out the candied pieces. It was soo yummy!!

cook pie for 30 mins. let it rest and then put it back in for another 15 mins to complete cooking time. (rest should be no longer than 10 minutes.

iwas looking for a recipe for my husband because he loves ricotta pie. it was so easy to follow. it took no time to prepare and tasted wonderful. i really reccomend this recipe if you are looking for a great desert that will blow your family or guests away.
