Sweet Potato-Cauliflower Shepherd’s Pie

Sweet potatoes and cauliflower are used to create a lighter version of the classic British shepherd’s pie that has the ideal balance of sweet and savory flavors.

Ingredients

  1. 1 pound sweet potatoes, peeled and chopped
  2. ½ pound cauliflower florets, chopped
  3. ¼ cup chicken broth
  4. 3 tablespoons butter
  5. 1 teaspoon salt
  6. ½ teaspoon ground black pepper
  7. 2 tablespoons light olive oil
  8. 2 carrots, diced
  9. ½ onion, diced
  10. 2 cloves garlic, minced
  11. 1 teaspoon salt
  12. ½ teaspoon ground black pepper
  13. 1 ½ pounds ground beef
  14. 2 tablespoons tapioca starch
  15. 1 cup chicken broth
  16. ½ cup peas
  17. ½ cup corn
  18. 3 tablespoons tomato paste
  19. ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Place sweet potatoes in a pot and add water to cover. Bring to a boil and cook for 15 minutes. Add cauliflower and more water if needed; cook until all vegetables are tender, about 15 minutes more. Drain. Mash sweet potatoes and cauliflower with 1/4 cup broth, butter, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add carrots and onion; saute until softened, about 5 minutes. Add garlic, 1 teaspoon salt, and 1/2 teaspoon black pepper; cook 5 minutes more. Add beef; cook and stir until browned and crumbly, 5 to 10 minutes.
  4. Sprinkle tapioca starch over the beef mixture in the skillet. Add 1 cup broth, peas, corn, and tomato paste. Bring to a boil. Reduce heat and simmer for 10 to 15 minutes. Spread beef mixture evenly in a baking dish. Top with mashed sweet potato mixture. Sprinkle Parmesan cheese on top.
  5. Bake in the preheated oven until slightly browned on top, about 25 minutes. Let stand 15 minutes before serving.
  6. If you are not avoiding gluten, you can use flour in place of the tapioca starch.
  7. You can use all mashed cauliflower or all sweet potatoes, if you prefer. You can also use all regular potatoes. Just be sure to use the same total amount of whichever vegetable you choose.

The family really liked it. I used three yams and half a head of cauliflower for the top. Had leftover tasty pulled pork that I used instead of the ground beef so was able to skip the tomato paste. My kid says he hates cauliflower so I didn’t tell him about it until after he devoured it! Next time I will try it with more garlic and maybe some brussel sprouts too.

Loved it. Used ghee instead of butter and omitted the cheese. Used all sweet potato. Used frozen corn and peas cause that was all I had. Was tastier than I anticipated! Recommend trying ghee if you can I like the flavor. Next time will try with another fat.

I added 1/2 tsp dried rosemary, 1 tsp thyme and a bay leaf to the carrot and meat mixture to give the filling a little flavor. I added a little more butter to the sweet potato/cauliflower mix. I also added the tomato paste before the broth, cooking It with the beef, carrots, onions and seasoning. That helps to season the mixture and removes that ‘tinny’ flavor that tomato paste can have. It turned out really good.

I used 2 lbs of ground beef, about 1 1/2 lbs of sweet potatoes, a whole head of cauliflower and a 1 lb pkg of frozen mixed vegetables. I adjusted broth and butter because of the “extra”, too. A nice change from regular shepherd’s pie and I’ll fix this again.
