Baked Tomatoes

Ingredients

  1. 4 ripe vine-ripened tomatoes
  2. 2 tablespoons olive oil, plus more for tossing and drizzling
  3. Kosher salt and freshly ground black pepper
  4. 3/4 cup panko breadcrumbs
  5. 1/4 cup grated Parmesan
  6. 1 tablespoon finely chopped fresh parsley
  7. 1 clove garlic, finely chopped
  8. 1 shallot, finely chopped
  9. Pinch red pepper flakes

Instructions

  1. Preheat the oven to 450 degrees F.
  2. Slice the tomatoes from core to core. Remove and discard the seeds and juice, and add the tomatoes to a casserole dish. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Combine the 2 tablespoons olive oil, panko, Parmesan, parsley, garlic, shallots, red pepper flakes and some salt and pepper together in a small bowl. Fill the tomatoes with the panko mixture. Bake 20 minutes. Drizzle with a splash of olive oil before serving.

Wow… impressed with how this turned out!!  Used Kumato tomatoes which have thick ‘wall’ inside, removed inside with a melon baller, removed seeds as best I could, added juice and pulp to Panko and other ingredients for filling.  Did spray casserole beforehand with avocado spray as well as for inside tomatoes.  Filled tomatoes as directed and baked for 15+ minutes at the 450 deg. oven along with sea bass, same temp.  Excellent flavor!!  It’s a “keeper” recipe for sure.  Thanks, Neelys!!

Cutting core to core, the tomatoes split when cooking. Cutting horizontal worked better. Otherwise, delicious recipe! I diced the inside of the tomatoes (sans seeds) and included in the filling.

This is an exceptionally tasty side dish and they tasted even better a day of two later! Used fresh garden tomatoes and followed the recipe exactly and it turned out perfect. I’ll definitely make these again.
