Chocolate Waffles

Ingredients

  1. 3 tablespoons unsalted butter
  2. 3 tablespoons vegetable shortening
  3. 2 cups all-purpose flour
  4. 1 tablespoon baking powder
  5. 1/4 teaspoon salt
  6. 3 tablespoons sugar
  7. 3 large eggs
  8. 1 cup milk
  9. 1/2 cup chocolate syrup, plus more for topping
  10. 1/2 teaspoon vanilla extract
  11. Cooking spray
  12. Confectioners’ sugar and/or berries, for topping (optional)

Instructions

  1. Melt the butter and shortening in a small saucepan, stirring to combine; remove from the heat and set aside. Whisk the flour, baking powder, salt and sugar in a large bowl.
  2. Whisk the eggs, milk, chocolate syrup and vanilla in a large liquid measuring cup or a separate bowl. Whisk the egg mixture into the flour mixture until combined. (The batter will be slightly lumpy.) Whisk in the butter mixture until combined.
  3. Preheat the oven to 250 degrees F. Preheat a waffle iron and spray with cooking spray. Ladle some of the batter into the waffle iron to within an inch of the edge (1/3 to 1/2 cup batter, depending on your waffle iron); cook until crisp. Transfer the waffle to a baking sheet and keep warm in the oven. Repeat with the remaining batter.
  4. Divide the waffles among plates. Dust with confectioners’sugar and top with berries and/or chocolate syrup.

My husband found this recipe several years ago, and it’s been a hit with our family ever since. He usually serves them on a weekend or special occasion. But today, during Coronavirus shelter in place, we were treated to these on a Monday! Delicious with berries and whipped cream.

My mother used to make us Chocolate Waffles – she would put a scoop of vanilla ice cream on top. These were a special treat on a few Sunday mornings! I can’t wait to try this recipe to try and recreate a memory from 40 years ago!

Simple and excellent. I would just add that it’s always a good idea to let waffle and pancake batter rest for about 5-10 minutes after mixing but this recipe is fast and easy. It also lends itself to creative toppings. I added sliced bananas and caramel for my kids instead of the strawberries and raspberries and they loved it. Definitely added to my go to recipes.

Made this super easy recipe for dessert and served it with strawberries, bananas, chocolate syrup and whipped cream. The only change I made was that I added a little extra chocolate syrup in the mix. They smelled as good as they tasted! These waffles were a big hit

This is very good!! The toppings we chose from were shredded coconut (yum!, powdered sugar, chocolate chips, chocolate sauce, and whipped cream. We didn’t have any raspberries, but I’ll definitely use them next time. My only complaint would be that they were a little crispy, but I think that’s my own fault. Definitely a keeper!

A very delicious recipe if you love chocolate! Super moist with tons of flavor. The raspberries cut the sweetness of the waffles and is a nice addition. You don’t need very much of the chocolate sauce syrup though. I could see how adding to much would be overwhelming! Bananas or strawberries would be tastey on this as well!

In years gone by, this was a special after movie late night snack, only we had chocolate ice cream on top and hot fudge over it all and maybe sliced bananas or Strawberries. Remember!
