Yield: about 20 truffles

Ingredients

  1. 6 ounces bittersweet chocolate, chopped
  2. 6 ounces fresh (mild) goat cheese, at room temperature
  3. 1/4 cup confectioners’ sugar
  4. 1/2 teaspoon vanilla extract
  5. 1/4 cup sweetened cocoa powder, sifted

Instructions

  1. In the top of a double boiler, or in a metal bowl set over a pot of simmering water (make sure the water does not touch the bowl), melt the chocolate, stirring until it is smooth. Set the melted chocolate aside to cool for a few minutes while you prepare the rest of the ingredients.
  2. In a bowl whisk together the goat cheese, sugar, and vanilla until it is light and fluffy. Whisk in the melted chocolate until it is well combined. Chill, covered, until it is firm, at least 1 hour.
  3. To form the truffles, take a heaping teaspoon of the chocolate/cheese mixture and lightly roll it into a ball with your hands. Roll the finished truffles in the sifted cocoa powder, set them onto a baking sheet lined with waxed paper, and chill until they are firm, about 30 minutes. The truffles can be stored in an airtight container in the refrigerator for up to 3 days.

OMG!  These are amazing!  We have a small Dairy Goat farm in Florida and I am always looking for new goat cheese recipes.  Everyone loves these!  And so easy!  Thank you!

Absolutely delicious! Think…the perfect bite of rich chocolate cheesecake.

I make these every year for my hubs on Valentine’s Day and we just make ourselves sick on them. On every other one, I wrap the mixture around a raspberry. nom.

I used fresh-made chevre, without salt, and these turned out creamy and delicious. I plan to make a version without chocolate and add some liqueur.

Most of my family members didn’t like these truffles, but two of us adored them. Just be sure to have more than one kind, or your truffles will NOT be a hit!

Very very easy to make, and reminds me of deep chocolate cheesecake with a bite from the tangy goat cheese. Highly recommend if you can manage the expectations to NOT be completely sweet like a normal truffle.

I’m a big fan of goat cheese. I even plan to get my own goats someday and make chevre. I was interested in trying this recipe because I thought it might be a good use of my future goat’s milk. I found the truffles to be creamy (even when cold), rich, tangy and very chocolatey. You can taste the goat cheese, especially after the first hit of chocolate subsides. I had friends and co-workers try them and everyone liked them, even those who don’t like chevre.
