Lamb Tagine

Ingredients

  1. 1 (4 to 5 pound) bone-in leg of lamb
  2. Salt
  3. Pepper
  4. 1/4 cup vegetable oil
  5. 10 cloves garlic
  6. 2 small onions
  7. 6 sprigs rosemary
  8. 2 whole cinnamon sticks
  9. A few whole cloves
  10. 1 pound sweet potatoes, peeled and cut into 1 1/2-inch cubes
  11. 1/2 pound pitted prunes
  12. 2 bottles good pale ale

Instructions

  1. Preheat oven to 325 degrees F.
  2. Season the lamb with salt and pepper. Heat oil in a tagine or Dutch oven over high heat. Brown lamb on all sides. Add remaining ingredients. Cover and cook in the oven for 3 hours. Turning once half way through cooking.
