Very Dairy Strawberry Shortcake Dip

The fact that this delicious dip recipe calls for four different types of dairy products gives it its name! The ideal accompaniment is a small strawberry shortcake skewer.

Ingredients

  1. ½ cup heavy cream
  2. 1 (3 ounce) package cream cheese, softened
  3. 1 tablespoon confectioners’ sugar
  4. 2 tablespoons milk
  5. 1 ½ teaspoons strawberry jam
  6. 1 ¼ cups all-purpose flour
  7. 1 ¾ teaspoons baking powder
  8. 2 tablespoons white sugar
  9. ½ teaspoon salt
  10. ¼ cup shortening
  11. 1 egg yolk
  12. ½ cup buttermilk
  13. 12 toothpicks
  14. ½ pound strawberries, cut into 1/2-inch slices
  15. 1 tablespoon strawberry jam

Instructions

  1. Beat heavy cream in a large bowl with an electric mixer until stiff peaks form.
  2. Cream together cream cheese, confectioners’ sugar, milk, and 1 1/2 teaspoon strawberry jam in a separate large bowl.
  3. Fold whipped cream into the cream cheese mixture.
  4. Cover and refrigerate until ready to serve.
  5. Preheat an oven to 350 degrees F (175 degrees C).
  6. Whisk together flour, baking powder, white sugar, and salt in a large bowl.
  7. Cut in shortening with a knife or pastry blender until the mixture resembles coarse crumbs.
  8. Beat together egg yolk and buttermilk in a small bowl, then stir into the flour mixture until moistened.
  9. Turn the dough out onto a lightly floured surface and knead for five or six turns. Pat or roll the dough out into a 1/2 inch thick round.
  10. Cut dough out with a 1-inch biscuit cutter and place on a baking sheet.
  11. Bake in the preheated oven until golden brown, 10 to 15 minutes.
  12. Cool on the sheet for 10 minutes before removing to cool completely on a wire rack.
  13. Cut the cooled biscuits in half .
  14. Skewer half a biscuit on a toothpick, followed by a strawberry slice and another biscuit half.
  15. Swirl 1 tablespoon strawberry jam decoratively into the chilled dip and serve with the strawberry shortcake skewers.

This is SOOO good! My kids were making Popchef skewers, so I was making a few different dips for all the fruit. I only made the dip, not the shortcake part of this recipe, so I can’t comment on that part, but the dip is amazing. I made it exactly as written, but thought it needed a bit more flavor, so I added some more of the confectioner’s sugar and an additional big glob of the strawberry jam. Perfect!! Strangely enough, one of my favorite fruits to eat with this dip (aside from strawberries and bananas) was the watermelon. Together they created a totally new flavor.

I just made the dip, but tripled the recipe for a crowd. I served it with Nilla wafers and it was a hit. Some of the guests used it to top a flourless chocolate cake too.

Fun way to serve strawberry shortcake, although it would be a pretty big bite for kids, but 2 bites would work. My cutter was 1-1/2″ (smallest I had), so not that much bigger than the 1″ called for in the recipe. I used reduced fat cream cheese, but the next time I make these, I’m going to try light Cool Whip instead of heavy whipping cream to try to get the nutritional breakdown a little healthier. I did add a couple drops of red food coloring to give the dip some eye appeal. Would make a pretty dessert plate for a dinner or a buffet table, and it all can be made in advance…yay!
