Mini Meatball Sandwiches

Ingredients

  1. 2 pounds ground chuck or ground beef
  2. 1/2 cup panko or other breadcrumbs
  3. 1/2 cup milk
  4. 2 cloves garlic, minced
  5. 1/2 teaspoon salt
  6. Freshly ground black pepper
  7. 2 tablespoons olive oil
  8. 1/2 medium onion, diced
  9. 1 large jar marinara sauce
  10. 12 dinner rolls or slider rolls
  11. 2 cups grated mozzarella

Instructions

  1. Mix the meat with the breadcrumbs, milk, garlic, salt and pepper, and knead the mixture together with you hands. Roll into heaping tablespoon-sized rolls.
  2. Heat the olive oil in a large skillet over medium heat. Add the onions and cook for 1 minute. Add the meatballs between the onions and brown for 1 minute. (You might have to do this in two batches, depending on the size of your skillet.)
  3. Pour in the jar of marinara and shake the skillet gently to mix. Put on a lid and allow to simmer for 20 minutes.
  4. When ready to serve, cut each dinner roll in half. Place a handful of grated mozzarella on the top and bottom of each roll. Spoon a meatball with the sauce onto the bottom bun; top with the top bun. Serve immediately!

These are great! I browned all the sides and cooked for about 10 minutes before I added the marinara. Served on king Hawaiian sub rolls, definitely a keeper.

These are fantastic – quick, easy, delicious, and ingredients are usually on hand.  My husband and teenage sons love them.   I have no idea why someone would give them a low rating.

This is my goto recipe for quick easy meatballs.  If you make it with an all natural jar of sauce you will love it.  I substitute the beef for chicken or turkey and it never fails!  Easy and delicious.

Made these last night for dinner.  Only change I made was adding the onions to the meatball mixture instead of to the sauce.  Everyone loved them and the leftovers for lunch today were even better.

I am not sure why some reviewers said meatballs were bland. The onions in the sauce made this super flavorful. I had to double my recipe and I had huge garlic cloves so I did have a lot of garlic in the meatballs. Everyone loved them and I thought it was super easy and fun to make.

The idea of a quick meatball sandwich is great, but I think the recipe needs a lot more so I added one egg, 1tbsp of ketchup, chopped parsley, parmesian cheese to the meatball and I think that brought it home. I also topped the meatballs with shredded motzarella cheese and fresh basil.
