Yield: 4 servings

Ingredients

  1. 2 to 4 tablespoons red wine vinegar
  2. 3 cloves garlic
  3. 1 bunch fresh mint (1 handful)
  4. 1 bunch kale (3 handfuls)
  5. 1/2 small red onion
  6. Kosher salt and freshly ground black pepper
  7. 1/3 to 1/2 cup olive oil
  8. Four 1-inch-thick T-bone steaks
  9. Kosher salt and freshly ground black pepper
  10. Olive oil, for drizzling

Instructions

  1. For the sauce: In a food processor, add the red wine vinegar, garlic, mint, kale, red onion and a pinch of salt and pepper. Pulse to chop gently, then add the olive oil in a slow stream while still pulsing to get a chunky sauce consistency. Rest at room temperature for about 30 minutes before using.
  2. For the steaks: Heat a grill or grill pan to medium-high heat.
  3. Season the steaks on all sides with salt and pepper, then drizzle with olive oil. Grill the steaks over indirect or direct heat, flipping once, until desired doneness. Remove to a plate and rest under aluminum foil for a real 10 minutes before serving. Serve with the sauce.

I used kale with mint and spread it over our grilled chicken.  This is amazing.  Thank you.

Made it tonight, kale & mint, quick and easy. We served over grilled chicken breasts. Consideting the olive oil component, I’m testing freezing a little in a small ice cube tray.

Delicious! I used kale and mint like she did on The Kitchen. We drizzled it over a side of roasted asparagus as well.  It really would be great on anything from meat to shellfish to potatoes!
