Everybody in my world loves and expects these ultra fudgy brownies. The key is not overbaking them and making sure those chocolate chips cool just enough to bring some slight crunch and texture to the gooey chocolatey experience.

Ingredients
- Olive oil or nonstick cooking spray
- 2 large eggs
- 1 cup avocado oil
- 1/2 cup water
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour, sifted
- 2/3 cup Dutch-processed cocoa powder, sifted
- 1/2 cup confectioners’ sugar, sifted
- 1 1/2 cups granulated sugar
- 3/4 teaspoon kosher salt
- 3/4 cup bittersweet chocolate chips, preferably large chips
Instructions
- Preheat the oven to 325 degrees F. Line a 9-by-9-inch baking dish with two overlapping sheets of parchment to create a parchment sling to easily remove the brownies. Spray liberally with olive oil cooking spray.
- In a medium bowl, whisk together the eggs, avocado oil, water and vanilla until well combined. Set aside.
- In a large mixing bowl, sift the flour, cocoa powder and confectioners’ sugar. Add the granulated sugar and salt and whisk to combine.
- Add the wet mixture to the bowl of dry ingredients and stir with a rubber spatula until just smooth. Fold in the chocolate chips.
- Pour the batter into the prepared baking dish and spread evenly. Bake until a cake tester or toothpick comes out with a bit of crumb stuck on it, 40 to 45 minutes or so. Let cool completely and cut into squares.

I have made these several times! Chocolate deliciousness.
My friends and family loved these. Followed the recipie exactly. They were even better the next day. Very moist and rich. Nine brownies would have needed a gallon of milk, makes more like 16-18.
These were outstanding. Super moist with rich chocolate flavor.
Disappointed in these. So greasy oil was dripping from them. Tasty but way too oily. Wondering if 1C. measurement is incorrect. And, avocado oil is expensive – used entire can for 1C
Question! Can I substitute melted butter for avocado oil?:):)

These brownies have a great flavor. I don’t have avocado oil so I used canola oil. I found them to be a bit oily. I’ll definitely try them again using avocado oil to see if that makes a difference. If not, I’ll thinking about using 3/4 cup of oil.
I vote no choc chips. If they stayed soft I wouldn’t object. No nuts either.
