Yogurt-Fruit Muffins with Bran Crumb Topping

Ingredients

  1. 12 ounces thick Greek peach yogurt
  2. 1 cup diced peaches, mangoes or pineapples
  3. 1/3 cup light brown muscovado sugar
  4. 1/3 cup pure cane sugar
  5. 1/2 cup canola oil
  6. 1/2 teaspoon pure vanilla extract
  7. 1 egg
  8. 2 cups all-purpose flour
  9. 2 teaspoons baking powder
  10. 1/2 teaspoon baking soda
  11. 1 cup bran cereal, such as All-Bran
  12. 1/4 cup walnuts
  13. 2 tablespoons pure cane sugar
  14. 2 tablespoons light brown muscovado sugar
  15. 6 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 425 degrees F. Grease muffin pans or line with paper liners.
  2. For the batter: In the bowl of a stand mixer, combine the yogurt, peaches, brown sugar, cane sugar, canola oil, vanilla and egg. Mix until combined. In a separate medium bowl, whisk together the flour, baking powder and baking soda. Add the dry ingredients to the wet ingredients and mix until just combined.
  3. For the topping: Combine the bran, walnuts and sugars in a food processor and process until coarsely ground. Stir in the melted butter.
  4. Fill the prepared muffin cups with batter and divide the crumb topping over each muffin. Bake the muffins until a toothpick inserted in the center comes out with moist crumbs attached, 15 to 18 minutes.
  5. Transfer to a cooling rack and allow to cool completely.

Needs salt & cinnamon. I used coconut oil instead of canola & pecans & oats in topping. Took longer to bake & was too moist. Not enuf peach flavor…adding freeze dried peaches would bump up the peach flavor

My bf, parents and I really enjoyed these muffins. They were so moist and lighter than muffins usually are. The only changes I made were light brown sugar for muscovado and for the topping I subbed the bran with regular oats.
