Lighter Fried Pork Chop

Ingredients

  1. 1 1/2 teaspoons olive oil
  2. 1 tablespoon all-purpose flour
  3. One 6-ounce bone-in center-cut pork chop
  4. Kosher salt and freshly ground black pepper
  5. 1 lemon, cut in half, 1 half cut into wedges
  6. One 14.5-ounce can cannellini beans, drained and rinsed
  7. 10 ounces baby spinach

Instructions

  1. Heat the oil in a medium skillet over medium-high heat. Put the flour in a shallow dish. Season the pork chop with salt and pepper. Dredge in the flour and add to the skillet. Cook until golden, about 5 minutes, then flip and cook to desired doneness, about 3 minutes more. Give the lemon half a good squeeze over the chop.
  2. Next, add the cannellini beans and spinach to a medium skillet set over medium-high heat. Season with salt and pepper and cook, stirring occasionally, until the beans are warmed through and the spinach is just wilted, 3 to 4 minutes. Give the beans and spinach a good squeeze of the lemon half.
  3. Serve the beans and spinach alongside the pork chop with the lemon wedges for squeezing over.

Really good recipe! I added season salt, salt, pepper, and a little sugar to the flour before dredging. I also used garlic salt on the pork chops, not a lot though so it wouldn’t be too salty. I put butter into the pan with the olive oil when frying the chops. My picky family wants me to keep this recipe and make it again soon! It was simple yet yummy.

I didn’t time it but it sure was a quick and super yummy and satisfying meal. My hubby was surprised how quickly it came out. He’s not a big lemon fan but he loved everything. I used a bag frozen spinach and it was great. I added some cayenne, garlic and onion powder to both pork chops and beans then threw in about 1/2 tbl butter at the end with lemon in both pans just because I finally bought a lactose-free butter and I always wanted to finish up some dish w/ butter. This was so awesome. My husband had two servings. We used blackened peas in lieu of white beans. ( we were using what was on hand ). It had a great taste and was quick to fix as well. Not heavy and the lemon was the perfect addition and flavor

The beans and spinach were delicious the pork chop was good but it still was too dry it’s my big problem with pork chops I’m not sure what I did wrong but I’m trying it again

It was alright but nothing special. I added garlic to the spinach. Maybe it took longer than 16 minutes to mince some garlic?

Quick, healthy and easy. My husband loved it, and he is not known for his healthy eating. I love that I snuck in some fiber to his diet. the beans were tasty and lemon is great on everything.
