Healthy Slow Cooker Chili

Ingredients

  1. 8 ounces cage-free boneless chicken breasts, cubed
  2. 8 ounces ground lean turkey
  3. 3/4 cup canned small black beans
  4. 3/4 cup canned great Northern white beans
  5. 4 cups no-sodium/MSG chicken or vegetable broth
  6. 2 cups canned organic low-sodium tomato sauce
  7. 1 cup canned no-sodium stewed tomatoes
  8. 1/4 cup lime juice
  9. 3/4 cup chopped celery
  10. 3/4 cup corn (frozen, canned or fresh)
  11. 1/2 green bell pepper, chopped
  12. 1/2 orange bell pepper, chopped
  13. 1/2 red bell pepper, chopped
  14. 1/2 yellow bell pepper, chopped
  15. 1/2 fresh jalapeno, minced
  16. 1/2 cup chopped yellow onion
  17. 1/4 cup chopped fresh cilantro
  18. 2 cloves garlic, chopped
  19. 2 tablespoons chili powder
  20. 2 teaspoons ground cumin

Instructions

  1. Place the chicken and turkey in a large saucepan over medium heat and cook until slightly browned. Add to a 4-quart slow cooker along with the beans, broth, tomato sauce, stewed tomatoes, lime juice, celery, corn, bell peppers, jalapeno, onions, cilantro, garlic, chili powder and cumin. You can cook on high for a faster chili that will be ready in 3 hours. Or you cook on low for 6 hours. Set the dial, enjoy your day and come home to a healthy meal.

Made this for the first time, I used hamburger because I already had it thawed out, it was delicious! My husband had seconds!

We really liked this soup! We did add salt and used all cubes chicken instead of turkey. I would use a diced tomato next time instead of stewed. I cut back on the chili powder and didn’t add the jalapeño since I don’t like a lot of heat. Great flavors!

Update: Still a favorite! This is a great chili that takes a lot of chopping though. We also love it with beef instead of chicken and turkey. So good!

Good chili recipe! I added some garlic in water along w a little more salt. Consistency came out great and we served over rice w fresh cornbread on the side. Really good.

It tastes good but it was too watery. I was looking for a thicker base and didn’t get it with this recipe.

If you’re browning the meat anyway, why not cook the celery, peppers, and onions that way first, too, for more flavor. Good recipe all the same! For more flavor add more cumin, some cayenne and more jalepeños, etc.

This was Delicious! I made the tomatoe sauce from scratch.  As well as the broth from boiling the chicken.

No taste! Had to add lots of tabasco along sausage and then top it with cheese to get some flavor.
