You must be very careful how long you marinate. I marinated 2 hours and the texture of the chicken thighs was mealy and unpleasant. The flavor was fine but the pineapple enzymes decimated the poultry texture.

This was unique and very good.  The ginger flavor really comes through.  I do think it needs quite a bit more soy sauce for more umami and flavor punch.  I will probably use about 1/4 cup.

This was so good!! And very easy! We won’t be going out for Hawaiian anymore… we can easily make it at home!

Easy prep and absolutely delicious! I marinated for closer to four hours.

I have used this recipe several times now, except I marinade the chicken overnight. My family used to always ask for me to make baked beans for bbqs – now, they ask for this chicken. Great recipe, thank you!

This was a great inspiration. This is what I did: 1 can pineapple rings, 1 cup brown sugar, 2 big splashes of soy sauce, 3 cloves garlic. Pureed the marinade in the blender. Marinaded the chicken over night. Pat dry the chicken with paper towels, let set on the counter for 20-30 minutes. Grilled (charcoal 5 minutes each side. Transferred to a 375 degree oven for 45 minutes. Finishing in the oven will prevent the sugar from burning, but will give you nice grill marks and grilled flavor. I grilled another can of pineapple rings and cut up then mixed in rice cooked with chicken stock.

This chicken recipe is very easy to make. It is delicious every time. My family calls this the “good chicken”.

definitely needs to be marinated 24 hours that made it amazingly tender I wish it was a little sweeter ANY SUGGESTIONS?

I did tweak the recipe-I marinated overnight, I put a can of cubed pineapple with all ingredients in the food processor and used boneless, skinless chicken breasts that I pounded flat. Hubby said he’s never had better chicken.
