Pacific Rim Chicken Burgers with Ginger Mayonnaise

Ingredients

  1. 1 1/4 pounds ground chicken
  2. 2/3 cup panko bread crumbs
  3. 1 egg, lightly beaten
  4. 2 green onions, thinly sliced
  5. 3 tablespoons chopped cilantro leaves, plus extra for garnish
  6. 1 clove garlic, minced
  7. 1 teaspoon Asian hot chili sauce
  8. 1 teaspoon salt
  9. 1/2 cup bottled teriyaki glaze
  10. 4 teaspoons honey
  11. 1 tablespoon vegetable oil, plus extra for hands
  12. 4 sesame buns, split and toasted
  13. 4 leaves red lettuce
  14. 1 cucumber, peeled, seeded, halved, and thinly sliced lengthwise
  15. Ginger Mayonnaise, recipe follows
  16. 1/2 cup mayonnaise
  17. 2 teaspoons sweet pickle relish
  18. 2 teaspoons minced fresh ginger
  19. 2 teaspoons lime juice
  20. 1 clove garlic, minced
  21. 1/4 teaspoon salt

Instructions

  1. In a large bowl, mix together the chicken, panko, egg, green onions, chopped cilantro, garlic, chili sauce, and salt. With oiled hands, form mixture into 4 patties. In a small bowl, mix together the teriyaki glaze and honey. 
  2. Heat oil in a large non-stick frying pan over medium-high heat. Add chicken patties and cook on both sides, brushing each side with the teriyaki-honey mixture, about 10 minutes, or until fully cooked through. Place burgers on toasted buns and top with lettuce, cucumber, and Ginger Mayonnaise. Garnish with cilantro sprigs and cucumber slices.
  3. In a small bowl, mix together all ingredients. Refrigerate until ready to use.

Made this evening for dinner. Except for using 1lb ground turkey, I followed the recipe exactly. Very easy to make with lots of flavor. The ginger mayonnaise was the perfect condiment. Next time, I will increase the ginger by 1/2 teaspoon for more punch. Perfect as a burger or for sliders. Rave reviews from Hubby. Will definitely make again. You won’t be disappointed.

Great recipe…every time I have served it, guest want the recipe.  Hard to believe no one has reviewed it before now.  I have used for many years.  very moist burgers.  Five Star for sure!
