Ingredients

  1. 3 large eggs
  2. 2 tablespoons whipping cream
  3. 1/4 teaspoon salt
  4. 1/8 teaspoon freshly ground black pepper
  5. 1 tablespoon (about) unsalted butter
  6. 10 slices bacon
  7. 2 (8-ounce) round loaves focaccia bread (7-inch diameter)
  8. 1 cup purchased pesto
  9. 8 ounces thinly sliced turkey
  10. 4 ounces thinly sliced provolone cheese

Instructions

  1. Whisk the eggs, cream, salt, and pepper in a medium bowl until well blended. Heat a 6-inch-diameter nonstick skillet over medium-low heat. Brush the skillet with some butter. Pour 1/4 cup of the egg mixture into the pan, swirling to coat the bottom of the pan evenly. Cover and cook until the egg crepe is just set, about 1 minute and 30 seconds. Invert the skillet over a plate, and allow the egg crepe to drop onto the plate. Repeat to make 4 crepes total, brushing the skillet with melted butter as needed and stacking crepes on the plate.
  2. Cook the bacon in a heavy large frying pan until crisp. Transfer the bacon to paper towels to drain.
  3. Preheat a griddle or grill pan over medium-high heat. Cut the focaccia horizontally in half. Place the focaccia cut side down on the griddle and cook until the focaccia is heated through and golden brown on the bottom, about 2 minutes. Spread the pesto over the toasted sides of each halved focaccia. Cover the bottom halves of the focaccia with the egg crepes, turkey, provolone and bacon, dividing equally. Cover with the top halves of focaccia, pesto side down. Cut the sandwich into bite-size wedges. Arrange the sandwiches on a platter and serve.

These are always a hit at gatherings, the egg crepe adds that surprise enhancement! Thanks, Giada!

these were delicious!  We chilled them and served them right out of the fridge.  Delicious leftovers, too!

I’m going to make this

Can’t count the number of times I’ve made this sandwich for my family.  Had it last night with soup for dinner.  Wrapped the sliced focaccia in the oven with a sprinkle of water to steam for 20 min before adding the other ingredients and got rave reviews from the family.  If you have a Costco membership their pesto is fresh and amazing.

I love finding exceptionally good recipes and this is certainly one of them. Fun to make, very different, and so tasty. On a scale of 1 to 5 I give it a 10!!!

I love these!  I’ve been making these sandwiches for my annual birthday party for about 8 years.  They’re a hit every time.  The sandwiches keep well and are great the next day too.  Highly recommended.

I made these cute little sandwich bites for the cocktail hour at a wedding I catered. Huge success! Very tasty.

Made two for a party and they went over well. Everyone thought they were ‘cute’ and tasty. We had some chopped/shredded prosciutto that we put on our second sandwich and it added great flavor.

Awesome idea! I made this for my family and it was a hit. I chose to precut the bacon to make my life easier. This is something that will suit many different tastes because you can easily alter ingredients. For an upcoming holiday open house, I will be making two varieties. In addition to the original, I am adding a roast beef selection.

Oh Yum!.. The grilled focaccia with the pesto was so awesome on a turkey sandwich; my son actually said it tasted like it came from a gourmet restaurant. In trying to be healthier I cut out the bacon and eggs. I used pepper-jack cheese just because it’s what I had and added some Romaine lettuce leaves. I also added olive oil to the pan when grilling the bread. I will definatley make this again! Oh and I made homemade “Basil Pesto” from this site! Thank you!
