Ingredients

  1. 1 to 2 limes
  2. 2 pounds oxtails
  3. 1/4 cup browning seasoning
  4. 1/4 cup vegetable oil
  5. 1/2 cup ketchup
  6. 1/3 cup brown sugar
  7. 1 tablespoon Caribbean seasoning
  8. 1/2 tablespoon garlic powder
  9. 1/2 tablespoon onion powder
  10. 1/2 tablespoon steak seasoning
  11. 2 sprigs fresh thyme
  12. 1 sprig fresh rosemary
  13. Salt and ground black pepper
  14. 1/3 cup all-purpose flour
  15. 1/4 cup chopped onion
  16. 1/4 cup chopped orange bell peppers
  17. 1/4 cup chopped red bell peppers
  18. 1/4 cup chopped yellow bell peppers
  19. Mashed potatoes or cooked rice, for serving
  20. Fresh parsley, for garnish

Instructions

  1. Cut the limes in half, then place the oxtails in a bowl with water and the limes and let soak for 15 to 30 minutes. Wash the oxtail with the limes, then set aside.
  2. In a large bowl, combine the oxtails and browning seasoning, rubbing the browning into the oxtails. Coat a pan with the vegetable oil and let get hot. Add the oxtails and cook until brown all over. Add the ketchup, brown sugar, Caribbean seasoning, garlic powder, onion powder, steak seasoning, thyme, rosemary, black pepper and 1 liter water. Simmer on low heat, covered, for 5 to 6 hours, stirring occasionally and adding water as needed.
  3. Pour the drippings into a pan and allow the fats to cool and separate. Remove the fat to a pan over medium heat. Add the flour to 2 cups water in a bowl and stir vigorously to remove clumps; add to the drippings. Add the onions and peppers. Simmer on low heat until thickened, 10 to 15 minutes. Season to taste.
  4. Plate the oxtails with your favorite starch, like mashed potatoes or over rice. Place 2 to 3 oxtails on top of rice or mashed potatoes, then pour some oxtail gravy on top. Garnish with parsley.

This recipe was easy to follow, and delicious! My only downside comment is that bottled Caribbean seasoning is not readily available where I live. I looked up a recipe that included staples I keep. It worked, and it was a hit!
