Ingredients

  1. 1 cup ketchup
  2. 1/2 cup soy sauce
  3. 1/3 cup barbecue sauce
  4. 1/3 cup minced fresh rosemary
  5. 3 tablespoons granulated sugar
  6. 1 tablespoon paprika
  7. 2 teaspoons ground cloves
  8. 1 teaspoon allspice
  9. 1 head garlic, minced
  10. 1 to 3 habanero chiles (depending on desired heat level), minced
  11. Handful fresh cilantro, minced
  12. Salt and black pepper
  13. 1 rack spareribs

Instructions

  1. Combine the ketchup, soy sauce, barbecue sauce, rosemary, sugar, paprika, cloves, allspice, garlic, habaneros, cilantro, some black pepper and 1 tablespoon salt in a large bowl. Add the spareribs, turning to coat. If time permits, cover and marinate for 1 hour.
  2. Preheat the oven to 325 degrees F. Transfer the ribs to a baking sheet and bake for 1 hour 45 minutes.
