Easy Smoked Sausage Skillet

Everyone will want more of this energizing salad because the radishes, which are crunchy and spicy, pair perfectly with the sweet, citrus-flavored dressing. Although we like it as a luncheon salad with crackers and wedges of hard-boiled egg, it also makes the ideal side dish for a picnic or BBQ in the spring or summer.

Ingredients

  1. ¼ cup olive oil
  2. 2 cloves garlic, crushed
  3. 1 (14 ounce) package Hillshire Farm® Smoked Sausage, diagonally cut into 1/4-inch slices
  4. 1 large red bell pepper, sliced thin
  5. 1 small yellow onion, sliced thin
  6. 1 (10 ounce) package frozen broccoli, thawed
  7. ½ cup chicken broth or water
  8. ½ cup tomato sauce
  9. 2 cups instant rice
  10. ½ cup shredded mozzarella cheese

Instructions

  1. Heat olive oil and crushed garlic in a large skillet. Stir in smoked sausage slices and cook until browned on all sides.
  2. Add pepper, onion, broccoli, chicken broth, and tomato sauce. Simmer until vegetables are tender and the liquid is absorbed, about 10 minutes.
  3. In the meantime, cook rice according to package instructions.
  4. Stir cooked rice into the skillet, sprinkle with cheese, and serve.

Used chicken sausage and the cheddar broccoli rice o roni with tomato puree instead of sauce as substitutes with fresh veggies. These with a little Cajun seasoning added the bit of flavor it needed the other reviews spoke of. Quick Easy and was a hit with teenage daughter. Win win

Was good for a weeknight meal. I par boiled potatoes in chicken broth that I drained, then added the potatoes to the sausage mixture to sauté, used the broth to cook the regular rice, the excess broth was added to the sausage and fresh vegetable mixture for the simmer time. Didn’t have tomato sauce but used up some fresh tomatoes, worked out well with the broth. Had pepper jack vs mozzarella, hubs really liked it. Was a good meal and easy prep after a long day at work.

I added yellow pepper as well. And cooked brown rice in rice cooker as it takes brown rice to cook longer and I wanted the whole grain rice for better nutrition. This left sauce to put on the rice in the pan.

I did half smoked sausage and 3 spicy sausage links (casings off and cut up) and added salt and pepper to the sausage while cooking. I used 3 tsp minced garlic (from jar) and 1 full can of tomato sauce. To add flavor I added 1 tsp garlic powder, 1 tsp oregano, a sprinkle of smoked paprika, and a little salt and pepper to the sauce/vegetables. I put the lid on top until broccoli was steamed. I cooked the rice separate and served the dish over rice instead of mixing them together. It has great flavor.

I made it according to the recipe except my broccoli was fresh and I cooked regular rice in chicken broth. It was somewhat bland but a generous salt and peppering really helped. Maybe some onion powder and other spices could’ve made it into something special. In the end it was quick, easy, and tasted pretty good.

We love this recipe as a starting point. To make this simple & fast, I use SALSA instead of tomato sauce, peppers and onions. Gives it a bit more flavor and eliminates the need for chopping! Otherwise, we follow as directed.

My family enjoyed this. I always read reviews first so I did double the tomato sauce and added some crushed red pepper. I decided to cook the rice with the rest of the ingredients so added rice and extra liquid to the pan. If you use minute rice, put broccoli in right away. I used basmati so had to cook 18 minutes and added fresh broccoli last 8 minutes. This gave the rice good flavor too. Great 1 pot meal!

A fairly quick and easy weeknight dinner recipe. I doubled the tomato sauce, used vegetable broth instead of chicken, and sub Tofurky for the sausage (since we are vegetarian). Have also used a vegan italian sausage as well. Ended up with a tasty veggie version of this dish
