Mahi Mahi With Cauliflower

Ingredients

  1. 4 6-ounce skinless mahi mahi fillets (about 3/4 inch thick)
  2. Kosher salt and freshly ground pepper
  3. 4 tablespoons unsalted butter
  4. 1/2 head cauliflower, florets cut into 1/2-inch pieces
  5. 1/4 cup sliced almonds
  6. 1/4 cup golden raisins
  7. 1/4 teaspoon ground coriander
  8. 1 tablespoon fresh lemon juice
  9. 1/4 cup chopped fresh parsley
  10. Lemon wedges, for serving

Instructions

  1. Preheat the oven to 375 degrees F. Season the fish with salt and pepper. Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat. Sear the fish until golden brown on one side, about 3 minutes. Transfer to a rimmed baking sheet, cooked-side up, and roast in the oven until just cooked through, about 10 minutes.
  2. Meanwhile, melt the remaining 3 tablespoons butter in the skillet over medium-high heat. Add the cauliflower and cook, stirring, until golden brown and crisp-tender, about 6 minutes. Add the almonds, raisins, coriander, 1/4 teaspoon salt, and pepper to taste; cook until the almonds are golden, about 2 minutes. Remove from the heat and stir in the lemon juice and parsley.
  3. Divide the fish among plates and serve with the cauliflower and lemon wedges.

Excellent! Used craisins instead of golden raisins and it was so tasty!  Also the market had no mahi-mahi so I used halibut instead and it was still delicious!

This was amazing – I followed the recipe and cooking instructions – it was so easy to make. I only substituted the almonds for chopped walnuts because that’s what I had in the pantry –  and it was amazing. I also baked a sweet potato for the side. The fiancé loved it and has asked for it again!! Whoo hoo! 🙂 two very enthusiastic thumbs up. Yum yum.

Relatively easy. The almonds took a bit longer than 2 minutes to brown up. The raisins made it nice and sweet and paired nicely with the fish.

This just did not come out right. I didn’t have Mahi so I used flounder instead; maybe that was my mistake. Some of the smaller pieces must have overcooked because the bigger pieces looked just fine. I placed the fish on a bed of greens, white rice, and the cauliflower. The first bite I took, the fish was very mushy and the texture was awful. I asked my family if they liked it and said it was okay. Needless to say, I couldn’t stomach my plate and opted for a sandwich instead. I will not be making this, at least anytime soon.
