Instructions

  1. Place your eggs in a pot and cover with cold water by 1 inch. Bring to a boil over medium-high heat, then cover, remove from the heat and set aside 8 to 10 minutes. Drain, cool in ice water and peel.
  2. Bring a pot of water to a boil over high heat. Reduce the heat to low, then add your eggs and cook 4 to 5 minutes. Drain, cool in ice water and peel.
  3. Bring a pot of water to a boil over high heat. Reduce the heat to low, then add your eggs and cook 7 to 8 minutes. Drain, cool in ice water and peel.

There is only one fool-proof way I have found in my 60 years of cooking to make a perfect hard boiled egg.
1. Bring water to a boil
2. lower eggs into water with a slotted spoon
3. Boil for 12 minutes
4. Remove from heat and cover pan for 12 minutes
5. Run cold water over eggs
6. Peel.
No shells stick to eggs, and they practicly peel themselves. Works EVERY time.

It worked just fine for me. I let the eggs sit for 11 min instead of 10, just to make sure they got done. One key piece of advice from another reviewer was to crack the eggs after cooling a little under tap water and before placing them in ice water. I cracked on the broad end then rolled them around 360 degrees to break up the shell all around. Then placed them in ice water. Pealed from the blunt end to get under the membrane. They more or less rolled out of the shell. I think cracking and putting them in ice water had a similar effect to putting tomatoes in boiling water then cooling them quickly in ice water in order to peel them. The instructions could use a little more detail.

I’ve used this method for years and it’s worked for me every single time. Be sure to use older eggs as fresh eggs will not peel well. 2 week old eggs will peel perfectly.

Be sure to use eggs that are at least a week or two old. Fresh eggs are very hard to peel. I raise chickens so I know.

So a little more instruction like place eggs in pot with the water so the eggs are getting cooked while water is coming to a boil, then the mins would be a lot more then 4-10 in the ranges in this recipe. So the water usually takes around 10 min to get to a boil so if you have the eggs in the water it will be more like 12 to boil then 8-10 min of sitting in the boiling water. maybe the instructions could be updated to have that? just saying.

Restaurant guy for 30+ years this is the correct way to do hard boiled eggs.

Remember all recipes are starting points, try and write one once and you’ll see.

Increase the time they sit OFF of the heat if you like harder eggs.
