Four-Cheese Pasta With Peas and Ham

Ingredients

  1. Kosher salt
  2. 12 ounces penne
  3. 1 cup frozen peas
  4. 2 large eggs, plus 1 egg white
  5. 1 cup evaporated milk
  6. 4 tablespoons unsalted butter
  7. 3 ounces sharp cheddar cheese, grated (1 scant cup)
  8. 3 ounces part-skim mozzarella cheese, grated (about 1 cup)
  9. 3 ounces fontina cheese, grated (1 scant cup)
  10. 3 ounces deli ham, in 1 piece, diced
  11. 1 ounce parmesan cheese, grated (about 1/2 cup)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until very al dente, about 8 minutes, adding the peas in the last 2 minutes of cooking.
  2. Meanwhile, whisk the eggs, egg white, evaporated milk and 1/2 teaspoon salt in a bowl.
  3. Drain the pasta and peas; wipe the pot dry and return the pasta and peas to the pot. Add the butter and stir to coat. Add the cheddar, mozzarella, fontina and the egg mixture. Place the pot over medium-low heat and cook, stirring constantly, until thickened, 8 to 10 minutes, adding the ham halfway through cooking (don’t let the mixture boil or the eggs will scramble). Remove the pot from the heat and stir in the parmesan.

This is a really good, almost gourmet Mac and cheese. Great for those picky eaters who love this kind of meal. I added more ham, as others have. Be sure to use all the cheeses. Ask if you cannot find everything. This makes a huge pot of food as you use 12ounces of pasta which was the whole box.
A winner in our house.
You can easily modify to add other protein or substitute.

Sauce did not turn out so well so I threw that away but I did everything else and added chicken instead of pork while it was cold into the pasta and added mozzarella cheese and it tastes good.

Loved it! Baked some chicken breasts, diced em and added red peppers,onions, garlic and more seasoning (ie. oregano, basil. I only use these recipes as a base, but you have to be creative.

Did not like this recipe. So very bland. For those who liked it, I temepered the eggs by warming up 1/4 cup of the condensed milk and added it to the egg mixture before putting it in the pot. No problem with scrambling.
