Egg and Hash Brown Pie

Ingredients

  1. 6 slices bacon
  2. 5 eggs
  3. ½ cup milk
  4. 3 cups frozen hash brown potatoes, thawed
  5. ⅓ cup chopped green onions
  6. 1 ½ cups shredded Cheddar cheese, divided

Instructions

  1. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  2. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 7×11-inch baking dish.
  3. In a large bowl, beat together eggs and milk. Stir in bacon, hash browns, green onions, and 1 cup shredded Cheddar cheese. Pour into the prepared baking dish.
  4. Bake in the preheated oven for 25 to 35 minutes, or until a knife inserted in the center comes out clean. Sprinkle remaining Cheddar cheese on top, and continue baking for 3 to 4 minutes, or until cheese is melted. Remove from the oven, and let sit 5 minutes before serving.

I doubled the recipe to use a 13×9 and let it bake a bit longer until the middle was set. Costco sells real bacon already crumbled in the bag so I dumped a bunch of that in a skillet and let it get hot. Probably about 2C. Then I put it in some paper towels and squeezed the grease out. What a timesaver!! Also – no bacon grease mess to clean up!! Came out beautiful!!

This was an easy recipe to make. However I don’t see how this could feed 8. I made it for my family of 5 and it was all gone. In the future I would add salt. I am not one who salts my food, but this definitely needed some. I also would cook the hash browns a bit bc in some parts of the casserole they were still hard and others they were cooked. So for next time, double the recipe, add salt, cook the hash browns.

Made using some pineapple deli ham instead of bacon. Took other reviewer’s suggestions and browned the hash browns in a skillet first according to the package instructions, and layered the baking pan; hash browns, meat/onions/cheese, egg mixture as baked as directed. Very good. The hash browns needed to have the crispness precooking them provided.

i made this ahead of time for a long weekend getaway. Our cabin didn’t have a cassarole, so I cooked it in an oiled skillet. Recipe made more than enough for two breakfasts. I also made this recipe, but substituted some black forest ham, cut into very thin strips.

Turned out pretty good. My Son, who is a Cculinary Arts student said it was good, but I needed to have cooked the onions longer. I probably just needed to mince them in the chopper instead of chopping them by hand. I did add a little salt and pepper, even though it wasn’t in the recipe, so that the potatoes wouldn’t bee too fresh.

I only had an 8×8 pan so that is what I used. It took 45 minutes to cook all the way through. I added a teaspoon of Everything But the Bagel seasoning (TJ’s). I mixed panko crumbs with the cheese sprinkled on the top at the end of the baking time for a little extra crunch. Loved it!

Easy and delicious!!! I made the recipe exactly as written, the only thing different is I used sausage instead of bacon because that is what I had. This a recipe that lends itself to any number of ingredients and I am already contemplating it as a quick and easy dinner!

I also sautéed the hash browns in butter, olive oil, garlic, and the green onions, before adding the egg and bacon mixture. It was great!
