Who knew grits could be sweet? We are in love with this easy-to-make instant-grits cup. Just prep the night before, add hot water, wait a few minutes and eat!

Ingredients

  1. 1/3 cup instant grits
  2. 2 tablespoons coconut milk
  3. 2 tablespoons dried cherries
  4. 2 teaspoons pistachios, roughly chopped
  5. 1 1/2 teaspoons light brown sugar
  6. Pinch ground cardamom
  7. Pinch ground ginger

Instructions

  1. Put the grits, coconut milk, cherries, pistachios, brown sugar, cardamom and ginger in the container. Secure the lid, and refrigerate up to overnight.
  2. When ready to eat, add 1/2 cup boiling water, stir gently and cover until the grits are tender and creamy and the cherries have plumped up, about 2 minutes. Stir again, and eat warm.
